Back to Basics

[donotprint]A bit short on time this morning due to my body not quite functioning on full speed (it was a bad idea to stay up trying to get the photos fixed in hindsight, but once I got stuck in I just wanted it over and done with!)

A stickler for routine I rolled leaped out of bed at 5.30am, 2 ten minute Pilates mini workouts (Abs and Flexibility) and the Women’s Health Straight Body Workout and I was feeling slightly more awake.

I decided last night to take a day off smoothie making which I slightly regretted this morning but not for long… My basic fruit bowl topped with Alpro Soya Plain Yoghurt hit the spot and knowing I had a delicious Pear and Almond Baked Oats Cake for my mid morning snack in work was an added little bonus (and also helped me feel less guilty about my lackluster early morning breakfast preparation!)

Breakfast bowl this morning included 3 plums, a peach, a kiwi and some of my blackberries which are starting to get a bit sparse. I’ll have to make another collection this weekend.

My “Angel a Day” book caught my eye this morning. I’m sure if I believe in angels, but I guess someone had to be looking over me last night to get through all the blog photo changes in record time! SmileI figured this morning, it being the beginning of a new month I’d see if today’s message was to my liking…

It was! Food related so of course I believed every word! I’m not sure I will be lighting the candle but as always I will say thanks for the food I eat, though to whom I’m not quite sure…

Now it’s time to get to work, hopefully my PC will be more compliant today, I’m foreseeing lots of multi-tasking for the morning ahead!

A little bit late but here’s my recipe for yesterday morning’s blackberry and almond granola as promised!

What’s your favourite type of Granola? Any nice healthy recipes for me to try? (Peanut Butter Granola is next on my list!) [/donotprint]

Blackberry and Almond Granola [print_link]

Servings – 1

Preparation Time – 5 minutes

Cooking Time – 30- 35 minutes

Ingredients

  • 40g (1/2 cup) rolled oats
  • 2 tbsp blackberries (pressed to a pulp with a fork)
  • 1 tsp honey
  • 1 tsp Splenda (Stevia)
  • ½ tbsp Almonds (crushed/flaked)

Directions

  1. Preheat oven to 150C (300F)
  2. Mix together oats, almonds, blackberry puree, honey and Splenda making sure the oats and crushed almonds are well coated
  3. Spread the mixture on to a non-stick or lined baking sheet
  4. Place in the oven for 30-35 minutes (giving the granola a mix half way through)

Serving Suggestion – Place on top of Blackberry and Pear Smoothie for a Bit of Crunch!

    1. It’s why I only make small portions! Using the fruit puree is great to avoid having to add oil, and if I’m going to add fat it would some sort of nut butter just for the yumminess of it!
