I like my coffee pink and fruit filled

Coffee who? Anyone who knows me knows I don’t drink coffee or tea. I drink the odd peppermint or camomile tea but the majority of the time I stick with hot water with a few dashes of lemon juice.

People immediately jump to the conclusion that I avoid the hard stuff for health reasons… which to a degree is now true but it’s not why it started! I confess, unashamedly, that it was after I got my teeth whitened; very vain I know!

And hence forevermore drinking smoothies with a straw!

Monday morning I usually awake bright and breezy eyed, it’s Tuesday’s were the appeal of the snooze button is very slightly more tempting (not that I ever give in for longer than 5 minutes, if I go down that I road there’s no going back!)

I needed a caffeine hit, but the thoughts of hot coffee now turns my stomach and the lingering aftertaste leaves little to be desired.

Sooooooo…..

A Pink Coffee and Raspberry Smoothie was born!

Who knew coffee and fruit went so well together!

In order to reassure myself that I wasn’t filling my body with a ghastly caffeine filled substance I decided to do a quick check up on the coffee perks (besides the obvious heightened alertness!).

Coffee Perks

Antioxidants and Caffeine…

  • help prevent type 2 diabetes, Parkinson’s disease, and dementia
  • reduction in development of certain cancers, heart rhythm problems, and strokes
  • reduced risk of gallstone disease
  • enhances the effects of painkillers!

Of course no hard evidence exists, but there are plenty of suggestive indications that at least some of the above is true! Smile

I liked it! Just enough of a coffee taste.

Prior to my coffee hit I managed to summon the energy to do 50 minutes of Pilates (almost a complete video).

And now it’s time to make haste and get to work before the caffeine wears off!

Raspberry Coffee Smoothie

Servings – 1

Preparation Time – 5 minutes

Ingredients

  • 125ml cool/cold coffee
  • 125g (1/2 cup) plain soy yoghurt
  • 2 tsp honey
  • 125g (1 cup) frozen raspberries
  • 1/2 tsp vanilla

Directions

  1. Blend raspberries to a smooth puree
  2. Whizz together puree and all other ingredients
  3. Slurp down with a straw!
