Well sort of done, I’m more than happy with the texture and taste, but the photos could still be improved upon but I am sort of content for the time being.

Without my strive for perfection what else is there?! I’ve always aimed high and continually extend the goal posts, admittedly sometimes to my own demise, but a little bit of failure never hurt anyone. It’s what makes us stronger!

To be content is undesirable as for me it means standing still. Every day I want to learn something new, be something new, create something new, life is all about the learning. A life worth living is a life full of learning!

That’s my inspirational piece done for the day! If it doesn’t work for anyone else I’m safe in the knowledge that the little bit of self reflection has reassured and motivated me for the day ahead!

I was unusually hungry this morning after my workout so I added in a spoonful of oats to tide me over to my mid-morning millet bowl I have planned. I opted for 20 minutes of Pilates, and The No Props? No Probsworkout today…ZZZzzzz…

It did the job but it’s starting to feel a little monotonous even with the variations.

I have two additional days off after my Barcelona trip this coming weekend so I plan on utilising the extra morning time do a bit of new workout testing. The new gym near work isn’t opening until December (so probably closer to next summer considering Irish builder estimations!) I was hoping it would be open before the nights started to draw in and my after work walks took on a new light.

Walking in the dark it shall have to be!

Apple Cinnamon Pie Overnight Oats

Servings – 1

Preparation Time – 5 minutes

Cooking Time – Overnight soaking (it’s hardly cooking!)

Ingredients

  • 1 small apple peeled, cored and diced
  • 1 tsp cinnamon
  • 1 tsp honey
  • 30g (1/3 cup) rolled oats
  • 1 tbsp buckwheat groats
  • 165ml (1/3 cup) boiling water
  • 1 tsp
  • 65ml (1/3 cup) soy milk to serve

Directions

  1. Place apple pieces in the microwave with a teaspoon of water to soften/stew slightly.
  2. Mix together oats, groats, apple, cinnamon and honey in a bowl or sealable container. If using a container close and give it a bit of shake.
  3. Add boiling water to the oats and place in the fridge, sealed or covered with cling film if using a bowl, for at least 4 hours or overnight.
  4. Serve with cold soy milk and topped with dried cranberries.
