Going back to work on a Thursday means that Friday feeling comes around faster than ever.
No better way to start a Friday than with a Green Monster!
Green monster take 3 was pineapple and strawberry based, with a hit of strawberry protein powder to give it an extra punch (recipe can be found down below after some further babbling!)
I opted for a greater ratio of yoghurt to soy milk to make an extra thick smoothie (I just about managed to slurp it up my straw).
Getting up at 5.30am was a hell of a of a lot easier this morning knowing that I have tomorrow off.
3 sets of 20, squats, lunges and calf raises was followed by some Pilates Abs work and the Women’s Health workout for a Curvy Body. I was raring to go this morning and got washed and ready for work in record time (casual Friday’s are a godsend!)
It’s just a pity I don’t have another batch of Chocolate Pear and Pecan Pie Overnight Oats to look forward to in work (but though I couldn’t be more excited about my PB and Jelly Baked Oat Cake!!!)
The recipe will come soon, but first a catch up on yesterdays delectable mid morning oats.
Chocolate Pear and Pecan Pie Overnight Oats
Servings – 1
Preparation Time – 5 minutes
Ingredients
- 40g (1/2 cup) rolled oats
- 1 tbsp unsweetened cocoa powder
- 1 medium ripe pear, peeled and diced
- 165ml (2/3 cup) boiling water
- 1 tbsp chopped pecan nuts
- 2 tsp honey
- Cold soy milk to serve
Directions
- Place all ingredients with the exception of the cold soy milk an airtight container, give a good shake and cool in the fridge for at least 4 hours or overnight.
- Serve with cold soy milk and couple of extra pecan nuts on top!

Green Monster Take 3
Servings – 1
Preparation Time – 5 minutes
Ingredients
- 2 generous handfuls of spinach
- 80g (3oz) of tinned pineapple in it’s own juice
- 70g (1/2 cup) frozen strawberries
- 1/2 scoop strawberry protein powder
- 125g (1/2 cup) plain soy yoghurt
- 85ml (1/3 cup) soy milk
- 2 tsp honey
Directions
- Blend together fruit and spinach to a green puree before adding in all other ingredients. Whizz until thick and creamy.
