[donotprint] When I think of green I think of spinach and when I think of spinach I instantaneously think of green monster smoothies.
I’m a huge fan and promoter of the benefits and deliciousness of green monster smoothies. I myself was one of skeptics who didn’t believe that including such large amounts of spinach in a smoothie could possibly yield anything other than a jar full of spinach flavoured glop.
Far from it! My latest green monster smoothie was by far the best I’ve had yet. Full of apple, spinach, honey, soy milk, soy yoghurt, a little few oats for extra staying power with a sprinkling of pistachios on top it was incredible. Not only did it taste sensational, it also worked wonders on my sore tummy which had decided to act up the morning this beautiful green creamy smoothie awaited me.
I hesitated as to whether or not to risk having my smoothie but I couldn’t imagine feeling any worse (at this stage I was bent over in agony at my desk) and as luck would have it the smoothie cured me!
The super powers of spinach never fail to amaze me!
Next time my stomach is giving me trouble I will turn to the green monster and should it cure me once more I will be promoting it as the new super sick tummy cure!
Before my green monster smoothie I started my Thursday morning bright and early, slightly earlier than usual as I wanted to get a head start on the day. I was up at 5am this morning. I find the earlier I get up the more tempting it is to repeat the practice the following morning. I’m always fighting for extra time during the day.
My workout this morning included 20 minutes of Pilates, Arms and Abs, The Burn Fat Fast Workout and the No Probs? No Probs! Workout. Though welcomed by many the slight rise in morning temperatures is not something I rejoice in…it just means my workouts end up being more sweaty!
Tomorrow’s Friday! And then 5 days off! Any plans for the long Halloween weekend?[/donotprint]
Apple Green Monster Smoothie with Pistachios
Servings – 1
Preparation Time – 5 minutes
- 3 medium apples peeled and diced
- 1 tbsp honey
- 85g (1/3 cup) soy yoghurt
- 125ml (1/2 cup) soy milk
- 3 generous handfuls of spinach
- 1 tbsp rolled oats
- 1 tbsp chopped pistachios (optional but encouraged!)
- Blend apple and spinach to a smooth puree using a hand blender before adding in all other ingredients with the exception of the pistachios. If you have a smoothie maker just blend everything at once.
- Top with chopped pistachios and serve with spoon! (It’s a thick one.)
