What I Ate Wednesday #6

[donotprint] It’s that time already. The day to share eats. My favourite part about today is catching up with all the other WIAW posts over at Peas and Crayonswhich usually leads to the discovery of new and wonderful blogs and inevitably results in food cravings and recipe inspiration.

Here’s what my day looked like yesterday…

Chocolate and Mint Green Monster Smoothie…topped off with some coconut and almond granola for that obligatory bit of crunch.

Followed by baked plum, pistachio and cranberry oats topped with plain soy yoghurt and a drizzle of agave syrup. I shall be posting the recipe tomorrow morning. They were divine!

Lunch was a homemade wholegrain spelt sandwich roll filled with grilled eggplant, zucchini, red pepper, red onion, goat’s cheese and red pepper relish.

Before dinner I had a rich red apple and a couple of Satsumas. Which I neglected to photograph…

Dinner was a mushroom medley. Portobello and porcini mushroom brown rice pilaf topped with caramalised onion, crispy sage and a couple of sliced figs for a hint of sweetness which worked a treat.

And of course I had my usual two squares of Lindt 85% Dark Chocolate, grapes, prunes and apricots as my night time snack. I just couldn’t go without a chocolate fix once a day. Starting and ending the day with chocolate, sure it doesn’t even matter what falls in between!

Be Thankful Challenge

At this moment I’m thankful for it being Wednesday, we’re over the hump and the weekend is in sight. I’m also thankful for the What I Ate Wednesday party, one of my favourite evenings of the week, can’t wait to get home to have a look at all the interesting eats!
