What I ate Wednesday #7
[donotprint] God Wednesday just seems to come around quicker every week. I’m actually off work today as my Mum isn’t well and needed both my hands to help around the house, restock the fridge and clear the never ending pile of ironing.
With most of the work done it’s time for a quick What I Ate Wednesday post… I couldn’t let a Wednesday go by without joining in the fun!
I had an incredible day of food yesterday. It started off with..
The thickest creamiest smoothie ever made up of banana and mango and topped of with banana chips, dried and fresh mango! It was one of the best smoothies to ever pass my lips.
Which was sharply followed by my Mango and Chocolate Baked Oats; baked mango and chocolate are sensational together, how am I only discovering this now! Recipe coming tomorrow morning.
My prized Fig, Lemon Basil Goat’s Cheese and Toasted Walnut Spelt Spaghetti; I’m glad I kept a one Fig which I plan on baking and topping with a scoop of vanilla ice cream after dinner!
I actually didn’t eat any fruit in between lunch and dinner yesterday. I had my fruit fix from my figs and lunch kept me going well in to dinner time.
I did however have plenty of room for my Chickpea Tagine with toasted almond millet. I squeezed in more fruit in the form of prunes and apricots. Sweet and spiced and all things nice!
And don’t you know my day wouldn’t be complete without a bowl of grapes and Lindt 85% Dark Chocolate, topped off with a handful of dates.
Favourite meal of the day…all amazing but the Figs win hands down!
