What I Ate Wednesday #10

[donotprint] It’s a special What I Ate Wednesday….because it’s now only four days until Christmas!!! I could not be more excited! I’m not exactly sure at this stage what I’m most excited about, the food, the family or the presents.

I had quite an amazing day of food yesterday so Christmas is going to find it hard to compete!

It started with a Blackberry and Almond Smoothie…which I’ll share in full later in the week!

Followed by an equally blackberry packed bowl of blackberry and almond overnight oats.

Next up was an incredible cannellini bean burger on a homemade spelt burger bun (again another one I’ll share later in the week – I hate myself when I’m reading other people’s What I Ate Wednesday posts and the recipes haven’t been posted…so I apologise!)

Dinner was a potential Christmas option..stuffed baby pumpkin with cranberry, pistachio, apricot millet pilaf…INCREDIBLE!

And then on to Lindt, grapes, prunes and pistachios – the only predictable things left in my diet!

An incredibly tasty day of food…that pumpkin really was the bomb.

I’m now off to pick myself up another pumpkin and get my last minute Christmas bits! (Time to get wrapping bagging this afternoon!)

  1. I can’t wait for all of those recipes – especially the burger! I’ve been trying to develop some of my own bean burger recipes but they just haven’t been coming out right. Maybe I should just stick to other bloggers’ tried and true patties!

  2. Experimenting is key! I’ve a bit of a back log so it might be after Christmas…I have another experimental one I’m making tonight which I might throw up at the weekend if it goes well….a bit more festive 🙂

  3. Thanks Sara! I never know what to say when someone pays my pics or food a compliment (I’m too self critical, they’ll never be good enough!) but that pumpkin really was good (picked up my one for Christmas today!)
