Slacking

I feel like I’ve been slacking the last couple of days…I’m usually so prepared with recipe ideas and blog posts, and have my photos ready to upload within an hour of taking them. Christmas is just one long extended weekend (I have the whole week of work) and so my routine will continue to stay disrupted for at least the next seven days!

Family time takes precedence and blogging has to take a little bit of back seat, though I’m cooking up plenty of food and taking snaps in preparation for lots of sharing. All of this food prep is actually taking it’s toll on me…well actually my fingers! A burn on Christmas Day just before dinner and then a pretty nasty cut from the mandolin yesterday as I prepared something I will be sharing later on in the week. Part of my finger decided it was interested in being a part of it…luckily enough my Dad was on to stitch me up.

So with an inability to use my right middle finger for much more than holding it up in the air it makes food prep and typing a little bit on the difficult side. Perfect breakfast solution…(as you haven’t already guessed!)

Refreshing yet comforting…

Overnight Oats! An ideal way to use up any leftover mincemeat you might have lingering around! The baked oats version was so good I had to give the overnights a shot. They were on a par, equally as festive and delicious! Overnight oats when I’m not in work, I have to admit does feel a little bit lazy, but for today it’s necessity! I’ll have this finger back in action by tomorrow…no pain no gain!

Vegan Mincemeat and Clementine Overnight Oats

Servings – 1

Preparation Time  -5 minutes

Ingredients

  • 30g (1/3 cup) rolled oats
  • 1 tbsp buckwheat groats
  • 125ml (1/2 cup) boiling water
  • 1 medium clementine segmented and roughly chopped
  • 2 tsp agave syrup
  • 1 heaped tsp mincemeat
  • 1/4 tsp cinnamon
  • Pinch of nutmeg

Extras

  • 64ml (1/4 cup) soy milk to serve
  • 1/2 tbsp flaked almonds
  • 2-3 clementine segments
  • 1 heaped tsp mincemeat
  • 1 heaped tsp clementine zest
  • Agave syrup to drizzle

Directions

  1. Mix together all oat ingredients and place in a seal tight container in the fridge overnight or for at least four hours.
  2. Serve with soy milk and extras placed on top!
