What I Ate Wednesdays went green for the month of March and although at least on meal of each day of eats I shared was either green based or speckled green.
No sooner has March come to an end than I manage to have a super duper green filled day. Well it wasn’t all green but I definitely made much more of a concerted effort or so it may seem; it actually came about by chance and a strong desire for green food! An extra cup of veggies is now the mission for the month ahead!
Green Monster Overnight Oats inspired by Angela’s recipe she shared last week. My take on green monster overnight oats is to come first thing tomorrow!

Creamy, sweet, and oh so green! will definitely making these again!

Then came a not so green clementine and date smoothie…


I stepped away from the bowls and firmly picked up my favourite jar and a straw for this one (I may have simultaneously slurped and scooped the jar full in to me). Zingy and fresh, creamy and sweet, a delicious mid morning treat to fill the gap before lunch.

Another big bowl of green, this time in the form of Spinach and Cannellini Bean Soup with some spinach crisps. Spinach crisp are a revelation to me! I’m a huge spinach fan, throwing it in to smoothies, stews, chilli’s, pasta dishes and serving it up raw as my salad green of choice. This is the first time I’ve baked/roasted spinach and it was incredible. The flavour intensifies and it becomes unbelievably crisp.

Alongside my soup and spinach crisps I had one my homemade vegan gluten free bagels!!! Recipe for the soup and the bagels to come this evening. The green soup counteracts not having eating a wholegrain for sure and everyone needs a doughy bagel every now and then! ![]()

An organic Orange and a Pink Lady apple filled were my fruity snacks before it came to dinner..
Thai Quinoa Tofu inspired by a recipe from over @PeasandThankYou. Absolutely incredible!

My take on the amazing recipe idea will be up tomorrow.

Do I even need to mention my evening snack…prunes, apricots, grapes and dark chocolate and little few blueberries that were going spare.
I’m even more excited about it being Wednesday this week as tomorrow is my Friday! (long weekend for Easter, yes, please and thank you!)…![]()

That soups sounds awesome! I love the idea of spinach crisps. I’ve been making crispy brussels lately (same idea, just using brussle leaves). Love that crunch!
Ooh brussels would work well I imagine. I love crispy kale, the spinach is a little more delicate but well worth being careful for the end result!
