[donotprint] After the mass chocolate consumption yesterday (I didn’t partake in too much, though I did get an amazing gluten, dairy and wheat free egg from my Mum..the things she hunts down for me ) I ate a fair chunk but have plenty still reserved to curb my inevitable chocolate cravings during the week!
Even after the mild over indulgence yesterday all I wanted this morning was something refreshing.
After hitting up the gym for 7km run (I’ll back in the outdoors tomorrow to see if I keep up the same pace on the path), I was craving a big bowl of good old thick and creamy highly chilled smoothie.
A little experimentation went down after I gathered my ingredients. The end mix was not one I would immediately come up with but inspired by the left over fruits in the fridge I was sure glad to have created it. Grapefruit, strawberries and banana, topped off with walnuts and goji berries. I love the distinct flavour of goji berries and paired with the equally unmistakable strong savoury nuttiness of the walnut, it made for a one incredible smoothie topping.
Of course fresh grapefruit and strawberries also lay on top, as there wasn’t enough already in the mix! I went with frozen strawberries as opposed to fresh. They make for a thicker and cooler smoothie all round and blending fresh berries of any kind in large quantities is something I just can’t bring myself to do!
Bank holiday Monday’s are always such a treat. Not that I’m one for lazing about in bed all morning, I was up and about by 7, out to the gym for 9, a quick stop at the shops, sweaty face and all, home, showered, breakfasted and now blogged all by 10.30am.
An extra day off in my mind is spent no better way than being productive. Next on the list is the weeks grocery shopping followed by an afternoon with my gorgeous little niece. Food prep for tomorrow will also feature somewhere within the day.

Grapefruit Strawberry and Banana Smoothie
Servings – 1
Preparation Time – 5 minutes
- 250ml (1 cup) almond milk
- 60g (1/4 cup) soy yoghurt
- 1 medium pink grapefruit
- 1/2 cup frozen strawberries
- 1/2 small frozen banana
- 1 tbsp ground flaxseed
- 1 tbsp maple syrup
- 1/2 tbsp goji berries
- 1/2 tbsp chopped walnuts
- 2 fresh strawberries
- Peel grapefruit and reserve two slices for garnish.
- Blend together all ingredients with the exception of the goji berries, walnuts and fresh strawberries, until smooth.
- Serve a in a bowl topped with reserved grapefruit, strawberries, goji berries and walnuts.
