I mentioned yesterday evening how I’m making a bit more of a concerted effort to eat foods that are in season… And as a result I’ve been eating copious amounts of asparagus!!!
Yesterday started with one incredible smoothie, a meal minus the asparagus.

Blueberry and Banana! Thick and creamy as ever topped with dried chewy banana, dried blueberries, flaked almonds and fresh blueberries.

It was absolutely incredible! Honestly one of the best smoothie ever.

Then came my plum overnight oats….

Making use of the all the plums, yellow, pink and black, all of which are incredible at the moment (though sadly that was the last of the yellows). I love how the different variations have their own distinct flavour and texture.

I topped off the plumy oats with pistachios and dried apricots as well as few plum slices I held back. The perfect mix of creamy, chewy, crunchy and fruity!
After plum oats came lunch. The amazing asparagus and shitake mushroom quinoa pilaf!

In between I snacked on a blood orange and a pink lady apple…
And then came dinner. Pan fried orange, ginger and maple tofu steaks served on a pak choi orange sesame salad.

Another incredible tofu dish (I’m as madly in love with this one as I am the blackened tofu from last week!) The steamed pak choi salad was simple and fresh, the oranges complimenting and bringing the flavours of the tofu alive. I tossed some cashews in to the pan once the tofu was removed, toasting them in the residual slightly sticky sauce from the tofu.

I was surprised to find the pak choi was actually Irish! I wasn’t aware we grew it in Ireland; you learn something new everyday!
Recipe will be up tomorrow evening! Simple, fresh and oh so satisfying!
Of course before bed I had my bowl of grapes, as well as some blueberries, prunes, dried apricots and a couple of squares of Lindt 85%!
Another wondrous day of eats. That extra cup of veggies was definitely accounted for between the big bunch of asparagus in the pilaf and the two pak choi sitting under my tofu.
Best meal of the day….after much consideration I’m giving it to the smoothie!!!

Oh my god how can you not like blueberries? Do you not even like blueberry flavoured things? Blueberry yoghurt? Frozen blueberries are so good in smoothies!!!

I want your eats for a day! I love this all…but the smoothie color is my absolute favorite! I’ve been adding spinach and almond butter to my smoothies lately and it’s ruining their bright flavors!
If your going for spinach stick with banana and mango or pineapple and they’ll have a wonderful bright green colour!
I try to buy some fruits and veggies in season because they get really expensive when they arent.
As always, your food looks AMAZING! I really think you should get some award for your great photography!!
