A mixed bag

A lot of the time when it comes to putting together my What I Ate Wednesday post my meals follow some sort of theme or appear to fit together. Not this week! It’s very much a mixed bag…an incredibly tasty mixed bag!


Each meal tasted incredibly different, completely unique flavours and kept my tastebuds guessing yesterday. The reason…none that I can think of other than quite an array of cravings needing to be satisfied and fridge full of an array of delicious fresh produce.

Yesterday was my first day back to work after a four day weekend (thanks to two days reserved holidays from last year!) and I kicked the morning off with a delicious PB & Jelly Smoothie.

All the goodness and deliciousness (as described yesterday…why rewrite an apt line!) of a PB & Jelly sandwich in smoothie form! Yum! Lots more PB & Jelly to come!

Next on the agenda were some pear and almond baked oats. The Bartlett pears had to get put to use once again after the incredibleness of the baby food smoothie last week (god that just not seem like a whole week ago!)

So unbelievably ripe and juicy, simply melt in the mouth. The flavour of the pears and dried figs burst within the oats to create an incredibly sweet sticky pudding like oat cake. Recipe shall be up in the morning! Smile

Lunch was sweet potato and mango extravaganza laden with chili.

It satisfied on all counts, sweet, savoury, fresh. Sweet potatoes are again making a comeback for me, it once more has been way too long. The combination of the mango and roasted sweet potato coated in chili powder was awesome, definitely one I will be repeating.

Before dinner I munched on a Granny Smith apple and a Blood Orange…

Post run I fed my tofu craving with an open vegan egg salad sandwich. This is the first time I’ve ever eaten tofu uncooked and I was more than a little impressed.

The salad was so quick and easy to put together and was super tasty. Tofu scramble and Tofu egg salad…I’m not sure I could pick a favourite, both top of my tofu list! Recipe will be up tomorrow evening.

Before bed I of course had my Lindt 85%, apricots and prunes and grapes (green for a change). A wonderful day of eats if I do say so myself.

Your mango and sweet potato salad look so good…I would have never thought to put the 2 together, but it makes sense! Love your pictures, too!

Have you ever tried tempeh? If you like tofu you’d probably like tempeh. I even love tempeh than tofu. It has more texture than tofu. However, I never have tried raw tofu. But I think that would be the same as the one cooked. Your smoothie looks so delicious. I believe it tastes so good. Can’t wait to try.

Funny you should ask! I tried it for the first time yesterday and loved it. So different to tofu. Uncooked tofu is just much smoother and creamier, it tastes the same though.

I love the look of your tofu salad. I like to make a tofu cottage cheese and mix it with veg on top of a salad. So yummy!

There is a great eggless salad seasoning packet from “nasoya” brand that i find sometimes in health food stores- it is soooo amazing and takes eggless salad over the top!
