It’s actually Thursday

Nothing like a short working week to make Wednesday’s even more special! Tomorrow is my Friday as this week it’s my brother’s 21st birthday. Seen as we’re having a bit of a get together on Friday night I’ve taken Friday off work so I can get involved in all the preparations and properly enjoy the day.

It is however What I Ate Wednesday Time, my favourite party of the week! It just never gets old. It’s a great day for a getting a little recipe inspiration and discovering new blogs.

Yesterday started with a cracking bowl of overnight oats

Strawberries and raw cacao nibs! Coconut and banana were also in the mix and they were positively delicious!

Strawberries are just incredible at the moment….so of course when hunger it I could think of nothing better than another fix this time in the form of a strawberry and raw cacao coconut smoothie.

Recipe for this beauty will be up tomorrow morning.

Then came lunch. A mock tuna pasta salad. Creamy, sweet, savoury, packed full of colour veggies, carb loaded with a dash of protein.

The perfect lunch if I do say so myself. It was deee…licious!

In between lunch and dinner I snacked on some fruit. A couple of juicy plums and a ginormous crunchy red apple (I’m not sure of the variety).

Dinner was something a little bit different but incredible simple. A spicy eggplant masala served up with some of my seedy spelt bread.

And then my evening snack…along with my Lindt, dried fruit and grapes I had one of my raw Vanilla Sunwarrior Protein energy balls…these things are addictive!!!

I’m between the Vanilla Sunwarrior Energy Balls and the Mock Tuna Pasta Salad as the best food discoveries of the day…both will be repeated Smile

I have to try those raw vegan balls! What do they taste like? All of your eats look amazing, and I’m stoked for the recipe :D !

It’s like Winter here in Ireland…we’re having the coldest May on record. Was 4.5degrees this morning! Brrrr!

Love the look of your masala, looks delicious. I need to make some raw energy balls/bars as I am doing some travelling next week and they are so easy to transport!
