It’s an extra special Wednesday this week as I have my last physio session and I’m hoping to do a little bit of running this evening…emphasis on the little. I’m a little bit nervous to say the least. As much as I’ve missed running I really don’t want to end up in the same situation I found myself in over the past few weeks. Being in constant pain is seriously draining! Anyway, enough of that, I shall let you know how it goes ![]()
In other foodie news… It’s What I Ate Wednesday time!!! My food yesterday was a whirlwind of experimentation which all turned out to be incredibly successful. Nothing like a fantastic day of food to put you in a good mood!
My smoothie was quite an interesting mix if I do say so myself….

Orange Mango and Pomegranate topped with pistachios, dried chewy mango, pomegranates and orange zest…oh and a couple of orange segments! It was incredible! Recipe will be up first thing in the morning bright and early!

Next up came chocolate and mango baked oats. The smoothie and overnight oats parfait all that time ago were too good not to take it to the oven.

They were AMAZING! The mango was melt in the mouth before it went in to the oven and when I eventually got around to milling in to the oats the mango and banana throughout, combined with the richness of the chocolate…in all honesty there are no words! I’ll get the recipe up Thursday morning (too many breakfasts and snacks and not enough time to share them!)

For lunch I tucked in the some coconut crusted tofu. One of the easiest recipes ever and super tasty.

Served up with some grilled peaches and green beans. Quite the lunch. I’ll stick the recipe for this one up tomorrow evening.

In between I snack on some fruit as per usual…my apple a day and orange for good measure.
Dinner came in the form of some quite incredible peanutty soba noodles which I’ve been meaning to make for quite some time. I finally got around to buying some new peanut butter so they were first up on my peanut butter recipe hit list!

Packed full of veggies, immersed in the creamy peanut sauce…simple satisfying soba noodles; peanut butter heaven! Recipe will be up Thursday evening!

I snacked on grapes, Lindt 85%, prunes and apricots and one of my Sunwarrior raw brownie bites before bed..perfect end to a vegan foodie’s dream day of eats (well mine at least!)
Most surprising experimental success of the day….had to be the coconut tofu! ![]()

that is quite the tropical island type of day. I bet your tofu was good- how does it taste crusted with coconut? peanut sauce sounds yum as well. I love it when experiments turn out well!
