As smooth as butter….

It’s the best way to describe the ready to eat mangos from The Happy Pear. I mentioned how amazing they are earlier in the week when one featured in my chocolate, mango and banana baked oats.

The combination was to die for and no sooner had I finished my plateful of gorgeousness than I was making plans for a weekend buckwheat bake! I decided to make it a little less chocolaty, opting for a chocolate chips as opposed to cocoa powder.

Diced mango and banana puree went in the bake itself. The mangos pieces were melt in the mouth, the bake light and fluffy, topped off with coconut, dried banana, soy yoghurt (Alpro Soya I love you!)…positively dreamy!

I sacrificed my Sunday morning pancakes for this…and it was more than worth it! Sometimes I’m just in the mood for something different and once it contained the mango, banana and chocolate combo I was going to be left pretty happy.

Instant bakes are just so pudding like, it really is like have dessert for breakfast. I’ve made a couple in the oven and they just aren’t the same. I prefer the sponge pudding likeness of the instant bake. Packed full of all the wondrous flavours (chocolate and mango, you can’t go wrong!), I pretty much licked the bowl clean; you know I got my finger in the there to make sure not a crumb or smidgen of melted chocolate chip went to waste.

I like have a more substantial breakfast of a Sunday morning (as you may have noticed from the pancake trend) as opposed to my smoothie and baked oat midweek obsessions (at least now I also have flake bakes to switch it up a bit!).

Buckwheat bakes aren’t something I make a whole heap of (at least not in comparison to pancakes…)

Instant Banana Mango and Chocolate Buckwheat Bake

Servings – 1

Preparation time – 15 minutes

Cooking Time – 3 – 3.5 minutes

Ingredients

Bake

  • 30g (1/4 cup) buckwheat flour
  • 1 tbsp buckwheat groats
  • 1 tsp baking powder
  • 1 flax egg (1 tbsp ground flax + 3 tbsp water)
  • 1 tbsp maple syrup
  • 1 tbsp plain almond milk
  • 2-3 tbsp mashed banana
  • 1/4 cup diced mango
  • 1/2 tbsp dark chocolate chips (vegan)
  • 1 heaped tsp desiccated coconut

Toppings

  • 1 tsp desiccated coconut
  • 1 tbsp plain soy yoghurt
  • 1/2 tbsp dried chewy banana pieces
  • 1/2 tbsp dried mango chopped
  • 1/3 cup diced/sliced mango
  • 1/2 small banana sliced
  • 1/2 tbsp dark chocolate chips (vegan)
  • Maple syrup to drizzle

Directions

  1. Mix together flax and water and set to one side until eggy in consistency (about 15 minutes).
  2. Mix together banana, milk, flax egg and maple syrup.
  3. In a separate bowl mix together flour, groats, baking powder and coconut. Add wet to dry and stir well to combine.
  4. Fold in mango and chocolate chips and place in a microwave safe ramekin lightly greased (I just use light spray olive oil).
  5. Cover with a piece of greaseproof paper or baking parchment and heat/bake in the microwave on high for 3-3.5 minutes. I cooked mine for 3.5 minutes but microwaves differ. Cook for three, check with a skewer and return for longer if needs be.
  6. Serve immediately topped with soy yoghurt, coconut, dried banana and mango, chocolate chips… fresh mango and banana on top and on the side.

This looks incredible…I need to get more mango (I finished my last one on your chocolate mango baked oats). I completely agree that these instant bakes are amazingly delicious, I keep on making your chocolate, pear, and pecan buckwheat bake, the combination (and recipe) is one of my favorites now. Not to mention the nutritional stats are hard to beat!

As a chocolate lover I can see why you like it but the subtly of the chocolate chips in this one is a winner! Mango’s don’t last long in my presence :)
