Pretty Pink Refresher

Watermelons…they’re not something I normally buy or even consider buying due to them being quite pricey. Also they’re quite humongous….. and seen as I’d probably be eating it single handily it would mean eating it continually over quite a few meals; repeat eating isn’t something I’m a fan of…

(Clearly chickpeas and tahini are exceptions Smile) This smoothie came about pretty much by mistake. Galia Melons were going for 39 cent each in the supermarket and I asked my Mum to pick me up one. She bought me a watermelon my mistake; yes she thought it was a Galia melon…it didn’t help that apparently the wrong sign was placed above them.

So with a medium sized watermelon in hand, or two hands rather, I decided there was no better solution that a smoothie. I did a bit of Googling and came across Angela’s Pink Flamingo Drink. Inspired!

I decided on a banana, strawberry and watermelon smoothie with a far hit of coconut and good mix of frozen and fresh fruits for extra deliciousness. It was the ultimate morning refresher yet it still had all the fantastic thick creamy qualities of any good smoothie.

I topped the pretty pink smoothie bowl off with a nice little array of goodies. I’m back in dried chewy banana after a short couple of days of it being missed in my life. Coconut, fresh watermelon, strawberries, fresh mint and chopped brazils made for one wondrous bowl of goodness (note to self, I’m using the word wondrous too much a need a new way to describe how good my food is!)

I don’t often use coconut milk in smoothies, almond milk is always the go to, but I decided on a bit of mix with this one. I figured the watermelon would make the mix a little more watery than I might like if I didn’t add something a little thicker and creamier in to the blend. It worked a treat.

Are there are any fruits that you bypass continually or simply just don’t tend to tickle you fancy? Give them a try I’m sure glad I did even if it was the result of a bit of a mistake at the outset!

Pinkilicious Watermelon Strawberry & Banana Smoothie Bowl

Servings – 1 (2 cups)

Preparation Time – 5 minutes

Ingredients

Smoothie

  • 125ml (1/2 cup) light coconut milk
  • 170ml (2/3 cup) almond milk
  • 1 cup diced watermelon
  • 1/2 cup frozen strawberries
  • 1 small frozen bananas
  • 1 scoop Vanilla Sunwarrior Protein Powder
  • 1/2 tsp vanilla extract
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 1/3 tsp xanthan gum

Toppings

  • 1 tsp desiccated coconut
  • 4-5 pieces dried chewy banana
  • 3-4 bite size pieces of watermelon
  • 2-3 fresh strawberries sliced
  • 1/2 tbsp chopped brazil nuts
  • Fresh mint to garnish

Directions

  1. Whizz together all smoothie ingredients.
  2. Serve topped with the array of suggest toppings! Dig in with your spoon of choice.

i made this pink refresher today to use up some of the watermelon chunks i froze for watermelon sorbet. i wasn’t sure how i’d like it, i’m a big smoothie fan but never put watermelon in it before. i loved it!! and your photos are stunning, great blog :)
