[donotprint] Parfait season is in full swing…as if I needed an excuse!

I’ve decided to try mix up my parfaits a bit by creating some new yoghurt flavours from my standard Alpro Soya Plain yoghurt. Bring on the blueberry chocolate cacao nib overnight oats parfait.

So good I could bathe in it!

I had this ready prepared sitting and waiting for me in the fridge on my return from the gym and couldn’t wait to dive in. Complete with blueberry and banana overnight oats, cacao nibs, coconut, blueberry yoghurt, fresh and dried blueberries…it was positively define!

Each and every one of my parfaits holds a special place in my heart but this combo is quite magical. It helps that blueberries are incredible at the moment, they actually look like they might bounce with juiciness not that I’m about to try, wasting blueberries is not my idea of a fun experiment.

The whole parfait is bursting with blueberry goodness. I used frozen (thawed) blueberries in the yoghurt and thickened it back up with a little xanthan gum (if it works in smoothies why not is what I say!)

The fact that the overnight oats are loaded with rich dark unprocessed cocoa powder also helps to make this parfait one of the most amazing parfaits ever.

The colour and blueberry bursting flavour reminded me of the epic blueberry smoothie that sings right back at me every time I look at the pictures from the full post. God it’s a good one!

Chocolate yoghurt in parfaits is also quite fantastic, though I’m totally digging the chocolaty oats and fruity yoghurt. The oats were creamy, a little bit chewy and all round melt in the mouth. I also made sure to include some bitter cacao nibs in the oats themselves. If going down the chocolate route you have to go all out! Smile

Chocolate Blueberry Cacao Nib Overnight Oats Parfait


Servings – 1

Preparation Time – 5 minutes + Overnight



  • 30g (1/3 cup) rolled oats
  • 1 tbsp buckwheat groats
  • 1/2 tbsp raw cacao nibs
  • 1 tbsp Dutch unprocessed cocoa powder
  • 1/2 small banana sliced
  • 2 tbsp chopped blueberries
  • 125ml (1/2 cup) boiling water


  • 125ml (1/2 cup) plain soy yoghurt
  • 1/2 tsp xanthan gum
  • 2 tbsp frozen blueberries thawed
  • 1/2 tbsp raw cacao nibs
  • 1/2 tbsp desiccated coconut
  • 1/2 cup fresh blueberries
  • 1/2 tbsp dried blueberries


  1. Mix together all overnight oat ingredients, place in a seal tight container and refrigerate overnight or for at least four hours.
  2. Blend together soy yoghurt, thawed blueberries and xanthan gum.
  3. Layer parfait, 1/3 of each of the ingredients, oats, coconut, cacao nibs, dried blueberries, yoghurt, fresh blueberries…and repeat twice more.
