What I ate Wednesday! Seriously I look forward to it every week, it’s the one time during the week when I take the time to peruse some new blogs, get some recipe inspiration from other bloggers and share a day in the life of peachy palate…

Peas and Crayons

It was another interesting one yesterday and I apologise in advance for the theme throughout the photos…I usually use one of my zillions of scarfs to dress up the window sill in work where I can take photos during the day. I forgot/was too lazy to think of different ones to use yesterday…hence the same one is used for the majority of the pics…but hey sure it’s the food that matters right? Smile

One of my new favourite combinations. Always a fan of strawberries and a fan of mangos when they’re juicy and ripe enough to peel the skin from them…a mango and strawberry smoothie bowl topped with dried mango and some of my almost grain free granola.

Positively brimming with summer sunshine! Recipe will be up in the morning.

And then for my second breakfast…. my new favourite breakfast bowl…

Overnight buckwheat, puffed amaranth…not much too it but it will get a proper mention later in the week.

And I finally got around to buying some fresh figs. Fresh figs which I had delicious plans for. An amazing grilled fig and peach quinoa green bean salad with a creamy drizzle dressing.

Fruity fresh and savoury all in one with a delicious hazelnut crunch. Recipe will be up tomorrow evening. It’s one of the best salads ever (ok so I always say that but I can’t help but be enthusiastic about such wonderful eats!)

I snacked on a pear which was a little on the crunchy side as well as pink lady apple with scoop of peanut butter before I hit up the gym.

Dinner arrived in all it’s gloriousness. Now joking aside, this really is the best curry I’ve EVER had. Pumpkin Tofu and Mushroom…Incredibly creamy, luscious, coconutty with just the right amount of a kick…

It was so amazing I simply couldn’t wait to share the recipe and stuck it up yesterday.

Tender tofu, meaty intense mushroom, melt in the mouth pumpkin, toasted cashews…dream food!

I finished off the night with one of my raw trail mix cookies…just the one paired with some Lindt 85% dark chocolate, a bowl of grapes and sprinkling of blueberries.

I always eat before bed. I don’t sleep soundly if I don’t have something to keep me going in my tummy overnight. I don’t believe in the whole not eating after 8 or 6 or whatever it the theory is. I get hungry at night and it’s clearly not making me gain weight as much as I still need to gain a few more pounds. Your asleep for long enough, why put extra hours on top of that night time fast!? Ludacris!

This post is just what I needed! I’m a somewhat frequent blog reader… and right now I’m consuming a night snack on vacation… while everyone else is done eating. With an ED history it’s a challenge to keep my mind from racing with negative thoughts… but your post quieted them all. Thank you for your positive influence :)

Your WIAW posts always make me fantasize about cramming so much amazing into one day…! (usually i have one amazing meal and the rest are rushed half-a$$ed things)
And i always always have a night snack- otherwise i wake up in the night hungry or i need the biggest breakfast ever. Those so called experts are lame.
