One small step for Mum, one giant leap for Me

[donotprint] Every time I see a Paleo recipe it seems to contain either one of two things or both…coconut flour/oil and almond flour. So I was going to coin these Paleo Burgers seen as the binder is almond flour/meal (ground almonds)….

But then I looked a little closer and it turns out Tofu ain’t encouraged so these Tofu Almond Patties are Paleo no more (not that they ever were anywhere else but in my mind!)

The thing about these burgers, aside from them being super duper tasty, healthy and easy to prepare…my Mum, the person is possibly the most opposed to tofu having only every tasted it once in her life tasted them and liked them! She didn’t just find them acceptable, she was actually quite intrigued and I reckon she might just make a batch herself.

One small step for Mum, on giant leap for Me…the reason being I’ve been trying to persuade her to try tofu for quite some time, to explain to her how amazing it can be. The burgers did the work this time around, no persuasion required. She peeped over to have a look at my plate, questions were being asked and so I put forward the question that she looked she was waiting to be asked…

“Would you like to try some..?”….You can imagine my surprise when she said yes! I clearly don’t blame her liking them! Tofu, almond and carrot are the main ingredients, with simply some flax egg, cumin, coriander, a little dash of chili and soy sauce…

What really elevated them to a whole new level was the roasted red pepper sauce. Easiest sauce in the world. Roast a pepper, cool, peel, blitz, add salt and pepper, basil and coriander or you herbs of choice and it’s ready to go!

I ate the three burgers as I craving a protein hit but you could easily serve one to each person, on a bun perhaps with a side of sweet potato wedges…Yes I will be making them again! I’ve been blitzing everything in sight having bought a new a hand blender over the weekend. It’s the best thing I’ve gotten in ages! I thought the last one I had was good but my life has truly been changed with this one. Banana soft serve has never been so quick and easy to whip up.

This thing takes whole frozen bananas and has them blitzed in mere seconds! If you fancy a burger that doesn’t require a whole lot more than a bit of blitzing these are just what you need!

Vegan Almond Tofu Burgers

Serves 1-3


Servings – 1

Preparation Time – 15 minutes

Cooking Time – 20 minutes


Almond Tofu Burgers (makes three)

  • 250g (1/2 pack or 9oz) firm tofu
  • 1 tbsp ground flax + 3 tbsp water
  • 1/3 cup finely grated carrot (2 small carrots)
  • 1/2 small white onion finely chopped
  • 2 tsp olive oil
  • 2 tbsp almond flour/meal
  • 2 tsp soy sauce
  • 1/2 tsp cumin
  • 1/4 tsp coriander
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp chili

Red Pepper Sauce

  • 1 medium red pepper
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh basil and coriander


  1. Preheat oven to 180C (350F).
  2. Slice red pepper in half, drizzle with oil and place on a non stick baking tray in the oven for 20-25 minutes, until charred and soft. Remove, allow to cool, peel off skin and dice roughly. Blitz pepper with the rest of the sauce ingredients to desired consistency (I prefer mine with a little few chunks). Set to one side.
  3. Mix together flax and water and set to one side for 10-15 minutes until eggy in consistency.
  4. Add onion and 1 tsp olive oil to pan and cook for 3 minutes, add in grated carrot and cook for a further couple of minutes.
  5. Meanwhile blitz tofu until smooth in a food processor or using a hand blender. Add onion and carrot to the mix along with all other ingredients. Mix well to combine.
  6. Dampen palms and shape mixture in to three small patties; mine fit just nicely in the palm of my hand.
  7. Preheat oven to 180C (350F).
  8. Heat a pan over a medium heat with olive oil. Place patties in the pan and cook for 2-3 minutes on each side until nicely browned. Place pan in the oven for a further 15 minutes, flipping patties at least once during this time.
  9. Serve on a bed of rocket or leaves of you choice with red pepper sauce, reheated or chilled.

Note: These patties reheat quite well and are perfect for tossing in a lunchbox to be eaten chilled (though warm is best).
