Cherry Breakfast Cake

I lied, it’s not quite cake but if you checked in on Wednesday’s post you’ll have known what was coming.

Quinoa Cherry Bakewell Flake Bake! This almond essence really is the best thing since sliced bread. A tiny drop and you have an amazing almond flavour, not to mention the smell. The waft of the cherry almond flake bake as it cooked was altogether incredible.

Seen as I always make these the night before so I can take them to work, it was with all my might that I resisted just eating it for dinner.

You know when something delicious comes out of the oven and you have a nibble of the corner which turns in to eating a generous portion…you do it without even thinking, it’s an uncontrollable automatic  reflex that in most cases you have no need to resist.

I waited my patience, allowed it cool and packed it up along with all the other vital cherrilicious components to take with me on my travels to the office. Fresh and dried cherries, flakes almonds, and a little coconut..not forgetting the soy yoghurt for the must have delicious creaminess that is always called for (and demanded by my good self).

I know people that can’t (they say can’t, they mean don’t like) to eat cake without cream, the experience just isn’t complete….soy yoghurt is my cream!

And when I delved in to this bake I was like the cat that got the cream. The cherries were soft, sweet with a little bit of residual tartness, gooey and melt in the mouth inside the quinoa flake bake. The almond flavour came through fantastically and worked just as well as in the smoothie.

I’ve been extra hungry this past week and my tummy has been behaving itself allowing me to fit a bit more in without the dreaded agony and bloating…I basically inhaled this flake bake and could have gone another round (luckily enough lunch wasn’t too far in the distance!).

It’s the type of quinoa flake bake that dreams are made of Smile

Quinoa flake bake…if you could create your dream one what would it contain?

Cherry Bakewell Quinoa Flake Bake

Servings –1

Preparation Time – 5 minutes

Cooking Time – 25 minutes

Ingredients

Flake Bake

  • 1/2 cup (45g) quinoa flakes
  • 1/4 cup (60ml) apple sauce
  • 1/4 cup (60ml) almond milk
  • 2 tsp maple syrup
  • 1 tbsp ground almonds
  • 1/2 tsp almond essence
  • 1 heaped tbsp roughly chopped cherries

Toppings

  • 2 tbsp plain soy yoghurt
  • 5-6 dried cherries chopped
  • Handful of fresh cherries
  • 1 tsp desiccated coconut
  • 1/2 tbsp flaked almonds

Directions

  1. Preheat oven to 180C (350F).
  2. Mix together all quinoa flake bake ingredients. Place in to a light greased or non stick ramekin and bake in the oven for 25 minutes.
  3. Remove and serve immediately or allow to cool for a couple of minutes, remove from ramekin and dress up all pretty with toppings.

This sounds amazing! I love the combo of cherry and almonds :)

I don’t tolerate soy yogurt very well, but I think my equivalent would be cashew cream!

Or even banana softserve with a splash of vanilla extract for something creamy!

this is the first time that i made one of your flake bakes and did the toppings. with the yogurt, it actually really filled me up, i couldn’t finish it! i mixed my black cherry concentrate with my plain yogurt to keep with the cherry theme :)
