A new shade of green

It’s that time of the week again…yummy eats to be shared, new blogs to be explored…

There was a bit of delay on my posting my recipes from last week as I was pretty sick Thursday and Friday but they are all now officially up on my Recipage Smile

Happy What I Ate Wednesday! And of course Happy 4th of July to all those across the water! In between all the eats of the last week I’ve made some new exciting purchases…

  • Bic Bands* 3 – they are there way to me from the U.S!
  • Nike Frees – these onesin black as the time it was the only colour they had in my size….
  • BSN Amino X– seriously my muscles are recovering so much faster! It’s magic powder. I’m taking half a scoop before and half a scoop after my workout.
  • Pukka Chai Vanilla Tea– loving it!
  • A new jar of almond butter….this one! It’s incredible, so natural, so nutty, so dam delicious!

Time to put the Visa Card away and “forget” my Paypal password….

And now for eats starting with that new shade of green. A new green monster smoothie of course….minty green monster to be precise!

Topped with my homemade chocolate coconut granola. I’ll get the smoothie up tomorrow and hopefully get around to the granola by the weekend. It’s such a good smoothie topper and turns the milk just perfectly chocolaty when served straight up in a bowl.

So green!

Hunger struck again mid morning for the second round of breakfast.

Tropical overnight oats. Overnight oats are back with a bang. Although not particularly sunny it’s been incredibly warm and altogether humid over the past week so cold oats are just the ticket. Especially when combined with delicious tropical fruits! Recipe will be up on Friday morning.

Next up was a delicious summer veg. and white been pasta. Super simple and incredibly tasty. My face almost ended up in the bowl in an effort to get every last bit and avoid splashing any of the dressing on to my white top.

I resorted to wearing a tea towel around my neck; who cares if you looks silly if it makes enjoying your food a hell of lot easier! FYI – Recipe will be up tomorrow evening!

Fruit filled the void, not that there was much of one after the humungous lunch but I’m always conscious of the fact that I don’t get dinner until a bit later and don’t want to end up hungry mid gym session.

Then came my quinoa and squash patties with blackberry salsa (recipe went up for these yesterday).

So fresh and tasty. Nothing more summery than combining fruit with savoury dishes in my mind Smile

After dinner I had the last of my cherry almond muffins which I mentioned yesterday (I only made a small batch of three as my freezer is currently full of new baked goods…I can’t get through them fast enough!) Recipe over Friday evening!!!

I’m calling them Exploding Cherry Almond Muffins seen as they semi explode whilst baking. I almost panicked and thought they were to be a baking disaster but once cooked and cooled they came out in one piece. Once more the almond and cherry combination was a massive success (smoothie and flake bake in case you missed them over the weekend!)

Lindt, grapes, cherries and some dried apricots and prunes as a pre sleep snack. Another tasty days of eats!

I love that almond butter too, but then again I can’t really compare it to anything else (other than home-made AB). I’d love to try some of the American nut butters at some point but those are pretty expensive if you’re having them shipped to Europe! I love your new Nike shoes. I’ve been wanting to by new sports shoes for quite some time now but I just haven’t found some with the right fit!

I know PB 2 sounds amazing and Justins Nut Butters…where abouts in Europe are you? I’d love to get some shipped to Ireland!

Wow – I am amazed by how neatly and amazingly appetizing your food is arranged!! everything looks very artistic, I wish my food would look like that, I usually never have the time nor the patience to make it look picture perfect!
