Putting in the effort

I always put in a bit of effort to make my food look pretty, it just makes me enjoy it all that much more. But some days I get a little lazy/too hungry to care and everyone of those days that I have I then make up for it with one of these! Winking smile

Peas and Crayons

Yesterday started with a blueberry and mango smoothie bowl…ever since the blueberry smoothie that rocked my world I’ve been longing for another one but just haven’t gotten around to it…

Until now! It’s a blueberry smoothie with a mango twist as well as a couple of others additional ingredients. Recipe shall be up in the morning.

Followed by some blueberry cobbler overnight oats! I did promise more overnight oats and overnight oats is what shall be delivered!

Man these were good! The toppings really made for one spectacular bowlful that I really didn’t want to end. I had a little leftover blueberry jam having made a double batch for my pancakes at the weekend.

Luckily enough I had an equally amazing lunch waiting for me! I knew just how spectacular it was going to be having taken my snaps bright and early in the morning along with a couple of obligatory and purposeful nibbles!

A beet, carrot and apple salad, vegan cottage cheese and quick and easy chickpea crackers! Recipe for all three was posted yesterday.

Fruit in between to keep me going, not that I needed a whole lot after that lunch but I always make sure to snack on something just to head off hunger for a little longer without overly filling my stomach pre workout.

Post workout dinner arrived in the form of a new vegan burger! Inspired by my lentil meatballs

It’s tasty, it has texture, healthy fats, veggies and burger boosting protein. Served with a little apricot jam…it was a doozy! I fell in love at first bite and umm and awed my way through it right to the end and continued to proclaim just how amazing it was throughout the hour or two that followed…it was THAT good!

I’ll stick the recipe for this one up tomorrow evening.

I did a bit of baking over the weekend and scoffed on the last of the batch I left out of the freezer…

Peanut Butter Blondies! Soft, dense and perfectly peanutty. They were an experiment that turned out better than I could have dreamed! Recipe to come Friday evening, perfect timing for next weekends baking Smile

On the fitness front…I’ve been switching it up a bit with a spin class once a week, a little more running and bit more strength training and taking a step away from the elliptical which is starting to bore me to tears!

I just tried my first smoothie in a bowl this week. I’m sold! I think I like it better than drinking it from a cup. Your blueberry bowl looks delicious!

I never knew there was a vegan cottage cheese on the market. Of course, I probably should have assumed there was. I guess there’s a vegan version of most everything – the trouble is just finding it!

What a fun day of food! I am obsessed with beets right now – raw or cooked! Actually, the combo of both makes for a cool textured dish.
