Missing

I temporarily went missing over the weekend and didn’t have a whole heap of posts going out. With my Nan’s 70th and Naoise’s 4th Birthday’s, meals to be cooked, parties to attend, a new Innotab 2 to set up (man it’s always the tasks that should be easy…) I didn’t have much time for getting my usual recipe sharing done.

It’s What I Ate Wednesday time now though! It came around so much quicker this week since I took Monday off work.

Instead of my usual sharing of my Tuesday meals I’m going to track back a little and share my eats from Saturday!

Peas and Crayons

It started with an incredible plateful of pancakes. Pancake to be more precise but it was on big thin crepe style pancake….

Packed with homemade vegan chocolate sauce and banana topped with, well a variety of deliciousness! I’ll have the recipe up for this awesome plateful tomorrow. I pretty much died and went to heaven. So excited about the sauce!!!

I had no room for snacks in my tummy before lunch time came around….but when it did I found plenty!

Vegan Mozzarella Peach Basil Tomato Salad or in other words a Vegan Caprese inspired by Emily over at Daily Garnish.

The peaches were an incredible addition. I’ll stick the recipe for this one up tomorrow evening Smile

Before dinner I snacked on one of my brownies which I whipped up on Friday evening….

Fudgy, soft, dense…incredible! Super simple, quite healthy and 100% delicious. Recipe will be up Friday morning!

Then came dinner in all it’s glory! And glorious it was!

An edamame soba noodle salad. Another fresh simple meal perfect for when you’ve a busy day on your hands!

Of course I snacked on my usual Lindt, grapes, some cherries and dried prunes and apricots before bed…don’t you know! So damn predictable sometimes Smile

On the fitness front I’ve been tackling a few of the ZWOW…on Saturday morning I went with ZWOW 16.Loving the short high intensity workouts!

Also last week I managed my first 8.5km run…I did some abs after 30 minutes and then went back for 15 more and my legs survived. The recovery time when using BSN BCAA’s is definitely making a difference!

What an incredibly delish saturday :) The soba noodle salad looks especially interesting. Did you use fresh red cabbage? And I am happy to find another food blogger whos a fan of Zuzanas workouts. I enjoy them a lot!

Mmmmm everything looks so delicious! Especially those pancakes:) The best thing I’ve eaten today would be a toss up between my blueberry banana “cheesecake” oatmeal and my grilled tofu, zucchini, mushroom and avocado sandwhich. SO GOOD. :)

looking forward to the soba noodle dish recipe, i was turning a bag of soba noodles over in my hands at the grocery store last night, wondering what their deal was… never had them before!

They’re by far the tastiest noodle ever! 100% buckwheat are the best, some are mixed with wheat.

i googled them but didnt find anything that looked like what i saw at the market. they were packed in water, and whitish colored. maybe those werent soba noodles…
