Like melted butter

Ok so lets get one thing straight…I’ve never been a butter fan! Not real butter, the dairy kind..however hit me up with some almond, peanut or pretty much any nut butter and I’m yours. I’ve also recently discovered coconut butter..AMAZING!

I’m always amazed at how creamy smoothies end up being…its all in the frozen banana! Or so at least I thought until I created the smoothest creamy bowl of deliciousness the other morning. It actually tasted like I’d but a load of butter or cream in the mix!

I used my favourite of all the melons…cantaloupe! I wanted to stick with the orange theme and so with some leftover steamed carrots lingering I decided I’d throw them in to the mix. I think it was really the combination of the two that made for such a thick and creamy smoothie.

The coconut butter might of also had something to do with it!

I never have a problem finishing my generously sized smoothie bowl but I will admit I struggled with this one, just ever so slightly Smile  Of course I licked the bowl clean in the end, I couldn’t let any of it’s amazingness go to waste! I always find it difficult, even when stuffed to the brim, leaving something tasty behind that I had every intention of eating…so I battled on through.

It kept me going right the way through the morning…only a few nibbles of chocolate chip granola were necessary to tide me over until lunch.

I never would have thought fruits with such high water content could create something so thick, creamy and luscious..this obviously isn’t the first one I’ve made! It really was quite the random mix up. I fancied some hazelnuts and hadn’t used sultanas as a smoothie topper in forever so they became components. The end result was not only an amazing texture it had incredible depth of flavour.

Pinkilicious Watermelon Strawberry Banana Smoothie (I’d forgotten how pretty this one was!)

This one was by far the creamiest but each of them were unique and positively wonderful in their own way; super chilled melon smoothies, perfect for the summer season!

It shone so beautifully bright in the morning light. Nothing like a sunny morning to make it that much easier to jump out of bed at 5am (I wasn’t up quite so early this morning thanks to the long weekend we are currently being blessed with Smile )

Cantaloupe Carrot Coconut Smoothie

Servings – 1

Preparation Time – 5 minutes

Ingredients

Smoothie

  • 1 cup diced cantaloupe melon (chilled)
  • 1/2 cup steamed peeled baby carrots
  • 1 cup (250ml) almond milk
  • 60ml (1/4 cup) coconut milk
  • 1 tbsp coconut butter
  • 1 tbsp ground hazelnuts
  • 1/2 frozen banana
  • 2 tsp maple syrup (optional – I just fancied some extra sweetness!)

Toppings

  • 1/2 tbsp sultanas
  • 1 tsp desiccated coconut
  • 1/2 tbsp chopped hazelnuts
  • 1 heaped tbsp diced cantaloupe melon

Directions

  1. Blend together all ingredients until perfectly smooth and creamy.
  2. Serve in a bowl with toppings spread over the surface. Stir through for extra delicious textures and flavours to the last bite.

Michelle you are the queen of smoothies! They always look soooo good!:) In terms of melon, cantaloupe is definitely my favourite, but honey-dew melon is growing on me, and I enjoy watermelon on a hot summer day (though Brit can’t stand the stuff!)

i threw some cantaloupe in the freezer and have been waiting to find a cantaloupe smoothie :) i don’t have coconut butter though, any other suggestion?
