It’s that time of the week again….
I don’t have anything particularly spooky to share but I do have a couple of new pumpkin recipes to share which at least fits in with the Halloween Element!
In case you missed it over the weekend I put together a post with some digestion tips…plenty of interesting bits that you might not have considered! All thoughts more than welcome!
Pumpkin Crepe anybody?

Filled with banana, a quick raspberry jam and topped with one of my all time favourite nut butters! Recipe will be up tomorrow!

Dee…licious!
I went with another crepe for lunch which I actually posted yesterday! Somewhere between a crepe and an omelette, vegan of course.

Filled with heaps of oyster and portobello mushrooms, steamed kale and a “cheesy” sauce. The type of lunch dreams are made of!

It was quite the triumph to say the least!!!!
Then came dinner which was a pumpkin apple lentil extravaganza! Totally inspired by Kath’s roasted butternut squash and apple side from last week. Seriously incredible combination. I went with sweet pumpkin and apple with Puy Lentils…

On a bed of creamy almond milk polenta! Recipe for this beauty will be up tomorrow evening. So simple and incredibly satisfying.

And finally a little snack courtesy of some baking over the weekend. The amaranth and walnut banana bread from last week is officially gone and so to fill it’s boots I whipped up another variety.
Chocolate quinoa and buckwheat flour banana bread with cacao nibs!!! Topped with some chocolate PB2 it’s the ultimate bed time snack!!

I also had an apple mid afternoon, and a bowl of melon and red grapes with my banana bread before bed time. I’ll never remember to take pics of snacks, I’ve given up all hope! ![]()

The polenta was probably the most surprising element of the day. It’s a staple I always seem to forget about….cooks up so quickly and is incredibly warming and comforting.
Is there anything you always forget about making but love it when it ends up hitting your plate?

haha but really this all looks amazing!!! I’m HORRIBLE at making crepes, but those all seem totally worth giving it another go. LOVED the digestion tips too–I forgot to comment over the weekend, but the information is so great! Can’t wait for all the yummy recipes to be up! Happy WIAW!
