Halloween!!!

Happy Halloween! One of my favourite holidays as a child. As I sit here on Tuesday evening writing up this post I haven’t quite decided if I’ll dress up or not. We’ll have kids a plenty knocking on the door this evening so maybe I should make the effort and at least crack out the face paint?

I remember dressing up as an Indian, a Teenage Mutant Hero Turtle (Leonardo but of course!) , I was a witch a couple of times, a clown, a fairy, a punk rocker (that was a last minute one as I was on the brink of being a bit old for trick or treating!), a Japanese lady, a Spanish dancer…so many memories, a whole lot of sweets!

Maybe it’s not the right time; or perhaps it’s the perfect time to catch up on latest nutrition post…The Sweet Truth which I posted over the weekend. Get the lowdown and sugar and were it’s likely to be lurking! The second part will be coming tomorrow!

I’m actually working today but hope to spend a bit of time with my niece this evening before she heads home for a second round of trick or treating with her mama!

Yesterday’s eats were damn – fastic…!

One of the most amazing breakfast bakes; the chocolate quinoa protein bake was too awesome not to play around with and make another variety!

Super duper protein backed, hella filling and incredibly tasty! Recipe to come first thing tomorrow! It will be the ideal breakfast to get you back on the straight and narrow and steady that blood sugar after today’s sweet treats!

It kept me going nicely through the morning before it was time to partake in a delicious bowlful of rich tomato baked butter beans.

An incredibly simple dish, super duper tasty…served up with a thick hefty slice of wholemeal spelt soda bread! Luscious is the only word for them! I’ll have the recipe up tomorrow; in the meantime get your bread baked, it will take you less than ten minutes to throw the ingredients in a bowl!

No snackage was called for! I was well and truly full to the brim. I’d prepared something special for dinner…

Mini Vegan Cornbread Quiche! How cute are they?! The perfect lunchbox filler!

Loaded with finely chopped veggies, peas and corn. They were positively beautiful! Smile I ended up eating them up just as they were. No sauce, no side, they didn’t need it. Light, fluffy and a little cheesy. Recipe will be up for these on Friday evening.

Before bed I had a slice of my latest baked creation….

Another Banana bread!!! I’m a banana bread addict! Can’t get enough of it!

Any guesses what this combo might be (apart from the obvious blueberries!) ? Recipe will be up first thing Friday morning!

Mmmmmh! Your butter bean dish and Cornbread quiches are SO on my menu for the weekend or next week once you’ve posted the recipes!

Will you let us know what you dressed up in case you decide to do so :) ? I haven’t dressed up for Halloween all that often so far seeing as it’s not all that popular around here.

Goodness, so many new recipes to come! You’re teasing us!!! I’m esp excited for the quinoa recipes tomorrow. I’m attempting to eat more of that stuff for the protein!

i cant wait for the recipe to those quiches! i’ve never had a quiche actually, but the health food store i work for makes them and sells them. i meant to tell you last week, but i had an amazing opportunity. their normal cook broke her foot, so the owner heard i like to cook from my coworkers and asked me if i’d be interested in some extra hours making stuff up for the store to sell. i took in some things i’d made and she tasted them and liked them! i was so proud and excited, and one of those samples was your pumpkin cheesey barley risotto with brussels and apples. just thought you should know your recipe helped one of my dreams come true – getting paid to be in the kitchen! anyway, it’d be cool to make up vegan quiches to sell alongside their other ones!

I’m a banana bread addict too. Even while at school when I can’t get real homemade banana bread, I make protein versions in my microwave! Speaking of single-serving awesomeness, that quinoa bake looks fantastic!

Oooh love the look of all of those! I don’t think I ever got that into halloween. It was more fun when I was at uni when really any event would mean fancy dress haha.

Can’t wait for a recipe for those little quiches! I make little mini fritatas with just cheese on the base but after moving and finally getting access to a muffin pan, I can’t wait to make more quick breakfasts!
