I’ve quite a few treats in store….yesterday’s eats went spectacularly well. I was due some success in the kitchen after my clumsy weekend! I managed to cut myself three times, pretty badly; I’ve worked my way through an entire box of Hello Kitty plasters!
I broke one of my favourite plates, drop my SLR smack bang on the floor, luckily enough it seems to have managed to come out of it injury less! I had a bread baking disaster, I made a kidney bean curry which was so bad I actually just threw it straight in the bin, and everything generally took twice as long as it should have to come together. It was like my limbs, namely my hands were working completely out of sync with my mind; it was the latter that was running a little behind!
I was back on an even keel by yesterday! Before I get eats you might have missed by two latest nutrition posts…

And so back to What I Ate Wednesday!

So food…. Yesterday started off with a super size thin crepe style buckwheat crepe. It feels like forever since I made one of these for breakfast and I’ve finally perfected the recipe (it will be up tomorrow morning!) I filled it up with some stewed plums which almost turned to jam and topped it off with almond butter, flaked toasted almonds and chia seeds…It was delicious!!!

For lunch I’d whipped up a chickpea, spinach and pumpkin coconut curry on Monday night. Topped off with some roasted chickpeas for an added bit of crunch.

Creamy, sweet with a nice bit of kick..incredibly comforting! I’ll have the recipe up for this simple dish tomorrow.

I pretty much face planted in to the bowl, wiping it clean before heading out for a late afternoon meeting.
I had every great intention of whipping up a fig based salad but there were no figs to be found on my journey. With some pomegranate molasses in hand I got a little inventive.

Sweet chili pomegranate molasses tofu with soba noodles! Plenty of spice and all things nice! I was impressed with my handy work; and totally in love with the pomegranate molasses! I’ll be making further use of it this week for sure. I’ll have the recipe up for this wonder Friday evening!

Yes more banana bread! This one really was awesome! Soft, moist with a nice ripple of banana and a peanut butter flavour. It was damn good! I’ll have the recipe up Friday morning for you; it’s a must bake this weekend!

Favourite meal of the day….I’m between the banana bread (if two slices counts as a meal!) and the pomegranate molasses chili tofu!
I had an apple, a juicy pear and a bowl of grapes, blueberries and cantaloupe during the day; the bowl of fruit topped with a Alpro soy yoghurt and a spoonful of bee pollen! ![]()
