It’s that time of the week again…never gets old! What I ate Wednesday! Love taking part every week and this week I have some interesting eats to share after a different kind of Tuesday…
Having not had the opportunity to cook up pancakes over the weekend, no time on my hands Monday morning to catch up I managed to get my fill yesterday morning!

Almond and plum pancakes with a nice mixture of almond, coconut and quinoa flour…delightful! After the deliciousness of the stewed plums in the buckwheat crepe last week I couldn’t wait to dig in to some more!

Nothing like a bit of pancake batter experimentation! Topped with a nice dollop of almond butter on each and delicious stew plums…a plate of pure pancake heaven well worth the wait. Recipe will be up for these first thing tomorrow morning!

Next up was my idea of the perfect Buddha bowl…grains, veggies, toasted seeds and a nutty dressing.

A simple bowl of food, packed full of flavour. Everyone has their own spin on these Buddha or hippie bowls as they’re also known but this is one of my favourites. I’ll shed light on the actual ingredients tomorrow evening ![]()
Dinner was quite different…I decided to go for a savoury version of the much loved buckwheat crepe…

Packed full of yet more delicious roasted sweet baby pumpkin, a delicious dressing and nutty crumble topping. Incredibly simple and satisfying on all counts. I’ll have the recipe up for this on Friday evening!!!

And then for a little stop in brownie land because frankly it’s been too long! All new zucchini brownies!

Rich, chocolaty, fudgy brownies…DIVINE! Recipe will be up first thing Friday morning! Well worth checking back for, they are all kinds of wonderful all rolled in to one ![]()
