Breakfast being my favourite meal is of course as important, if not more so, on Christmas Day than dinner!
Since discovering persimmons for the first time just over a week ago I’ve made my way through a fair few of them; some of them nicer than others. You don’t want to eat an under ripe persimmon, they just taste of nothing and the texture is not at all desirable.
A delicious juicy ripe persimmon on the other hand is amazing. It’s difficult to describe the flavour as it is quite suitable. A gentle mild flavour that pairs wonderfully with the tart cranberry of the season. They turn instantly jammy when stirred in to hot steaming oats, melting away in the mouth; dreamy!
With the two in mind I got working on a bowl of oats. Plenty of cinnamon, vanilla thanks to the addition of Sunwarrior Vanilla protein, whipped up with banana and toped with a generous helping of cranberry sauce and Sunbutter. Some toasted coconut finished the bowl of perfectly.
An aromatic, festive bowl of oats, warming to the very last bite and altogether luscious and dessert like. I made my dad a simple bowl of whipped oats a few weeks back and he said they were too heavy for him to have every day…this from the man that eats chocolate at Christmas time and all the days around, before and in between the New Year like they have to be consumed before they go out of date!
You may not have the time to bake scones…though they do take a mere 5-10 minutes to whip up and are well worth it!….but you’re sure to have the staples for this delicious bowl of oats on hand, all you need is to pick up a few persimmons and you’ll have happy faces all round the breakfast table. For kids who aren’t a fan of oats, through in a mashed banana and whip vigorously and serve them up something naturally sweet, a healthified pudding like breakfast that shouldn’t fail to impress.
Cranberry sauce is one of the best oatmeal toppings; I’m officially convinced. The tart sauce a top of the creamy oats, soft delectable persimmons and caramel like SunButter, I’d happily go for a bowl at the dinner table!

Creamy Cinnamon Cranberry Persimmon Whipped Oats
Servings – 1
Preparation Time – 2 minutes
Cooking Time – 6 – 7 minutes
- 1/2 cup (50g) jumbo oats
- 1/2 scoop Vanilla Sunwarrior Protein Powder (optional)
- 1 small banana mashed
- 1/2 cup (125ml) almond milk
- 1/2 cup (125ml) water
- 1 heaped tsp cinnamon
- 1/2 a larger persimmon diced
- Place oats, cinnamon, almond milk and water in a pot over a medium heat. Bring to the boil and simmer for 5 minutes.
- Stir in mashed banana, whipping vigorously to incorporate. Add in vanilla protein if using and continue to whip until well combined. Stir in persimmons and simmer for a minute to heat through.
- Serve oats topped with some more diced persimmon, toasted coconut, cranberry sauce, SunButter and mint to garnish.
