Chocolate filled clouds

Pancakes with the trio of dreams just had to happen! Chocolate, cranberry and orange….

I didn’t even care too much how the pancakes themselves turned out as I knew the flavours would be incredible regardless. Take the pressure off and let the ingredients work they’re magic, don’t expect a whole lot and you’ll end up with the most delicious fluffy pancakes that belong along side the clouds in the sky!

I must have lifted my fork at least five times in amazement and the beautiful thick pancakes that were sitting on my plate as I devoured mouthful after mouthful; or course sharing my enjoyment and awe with my mum who wandered about the kitchen! Smile

I infused the batter with lots of orange zest as well as stirring in some finely chopped dark chocolate. Topped off with cranberry sauce and some orange slices as well as a little extra dark chocolate and of course caramel like SunButter, they were the kind of pancakes every pancake enthusiast dreams about!

The extra baking powder in the mix more than likely had quite the part of play in the fluffy beauty of these pancakes, something I’ll definitely be repeating! The second two were even thicker than the first…I always cook one pancake in the pan/skillet, followed by the second two and nine times out of ten the second lot turn out much larger, thicker, perfectly formed and cooked. The pan has just reached the ideal temperature I guess..if only I had the patience to wait for it to heat from the offset!

The pancakes were just as awesome as the loaf cake and scones that came before them…to say I’m in love with this flavour combination is a massive understatement!

I unfortunately didn’t get to dig in to these beauties this morning, they were a Christmas Eve morning treat that I sat down and thoroughly enjoyed while flicking through the Sunday morning paper a day late. It was quite the unusual Monday morning, compared to my usual fluttering and flapping about the place trying to cram way to many activities in to the short amount of time available to me!

I was back to work in the Happy Pear yesterday afternoon, nice to be back to some sort of normal routine! I love the customer interaction, the natural merry buzz and sense of enjoyment and enthusiasm about the place, never fails to leave me with a smile on my face and surge of internal energy! The sun is shining this morning and I’m off to a spinning class before perhaps a round of pancakes!

Cranberry Chocolate Orange Infused Pancakes

Servings – 1 – 3 large pancakes

Preparation Time – 5 minutes

Cooking Time – 8 – 10 minutes

Ingredients

Pancakes

  • 1/4 cup (30g) quinoa flour
  • 1/4 cup (30g) buckwheat flour
  • 1 tbsp baking powder
  • 1 heaped tsp orange zest
  • 1/2 tbsp dark chocolate finely chopped
  • 1 small banana
  • 125ml (1/2 cup) almond milk
  • 1/2 tsp vanilla extract

Toppings

  • 1 tbsp SunButter
  • 1/2 tbsp dark chocolate finely chopped
  • 1-2 tbsp cranberry sauce
  • 1 tsp desiccated coconut
  • Fresh orange segments
  • Mint to garnish

Directions

  1. Blend together flour, baking powder, banana and milk. Fold in orange zest and dark chocolate chips and set to one side for 5 minutes.
  2. Place 1/3 cup measures of the pancake batter in to a non stick skillet (the batter makes three large pancakes) and smooth to spread with the back of your spoon. Cook for 4 minutes before flipping and cooking for a further 4 minutes on the other side. Serve topped with cranberry sauce, a dollop of SunButter on each, chocolate and coconut sprinkled over the top and orange segments on the side. Garnish with mint.

Noticed the SunButter….how good is it? I’m a hard-core JIF Natural kind of girl, how does SunButter compare?

Oh my god it’s amazing!!! Favourite nut/seed butter! I buy the Organic Sunbutter, I don’t know how they make it so incredibly creamy but it’s AMAZING!!!
