A very special Wednesday

Today is a very special Wednesday…it’s my favourite person in the world’s birthday!

And not just any birthday, her 50th! That’s right my mum turns 50 today. I’ve switched the days I work so that I could spend the afternoon with her. I gave her my presents first thing this morning before she headed off to work. Yoga classes, a new yoga mat and much need new trainers….bright yellow, blue and grey to put a little spring in her step!

I know we all feel we have the best mums in the world so I’m not going to harp on about why my mum is the ultimate but there are many things that make her special! I love her for many reasons, some of which I couldn’t possibly put in to words but here are a few which are bit easier to articulate…

  • I love the way she’s never lost her love for life
  • I love her childlike enthusiasm for all things humorous, fun and entertaining!
  • I love the way she is really a big kid at heart
  • I love how she’s always trying to play tricks
  • I love her intrinsic good natured kindness
  • I love her true open honesty
  • I love that she loves shoes as much as I do (and also that we have the same size feet)
  • I love her hugs
  • I love the fact that she has a magic ability to help me put things in perspective
  • I love that she’s my mum, my friend, my confident and that she’s knows me better than any one else in the world

And now it’s time to get on with the usual Wednesday fun…What I Ate Wednesday! Yesterday was another amazing day of eats. I seem to be on top of my game of a Tuesday; the bit of baking over the weekend also had quite the part to play…(also be sure to check out the new workout I posted on Sunday if you missed out, if you’re a fan of burpees your goana love it and if not it’s the perfect challenge to face midweek!)

Peas and Crayons

First up was another tropical feast…

The buckwheat crepe was so darn amazing the flavour combination just had to be repeated. I made a new seeded spelt sandwich bread at the weekend – I posted the recipe yesterday! The ideal loaf for making vegan French toast; thick hearty slices of seeded bread in a coconut flavoured coating…recipe will be up tomorrow morning! Smile

I went with something quite different for lunch, different for me, the norm for many. A sandwich, but not just any sandwich…

A cheesy pumpkin curried tofu sandwich! It was amazing! Having freshly baked home made bread on hand really does make meal planning all that much easier.

I’ll stick the recipe/directions up for this tomorrow evening and yes…I did use the same plate for breakfast and lunch!

Dinner was quite the treat…portobello mushrooms, roasted parsnips and sweet potato smothered in a thick rich barbecue sauce (you might recognise the table dressing! from lunch…it was a slightly lazy photography day but at least I switched up the plate for dinner!)

It was divine! Parsnips and sweet potato are two veggies I tend to neglect; owing to the fact that I eat  whole load of kabocha on a weekly basis and there usually isn’t room for any other orange component and I wouldn’t exactly call myself a parsnip lover. That said, this combination blew me away.

Serve with a ring of short grain brown basmati rice; I have an addiction but at least it’s a whole grain one!

I finished the day off with of my latest scone creations….Saturday morning baking, perfect for making sure you have something on hand during the week!

Blueberry and lemon scones! I was a little worried about folding in those blueberries but I managed to complete the task with all berries intact! Recipe will be up first thing Friday morning.

Lots of yumminess coming your way over the next couple of days, in the meantime get making your seeded spelt bread in preparation for tomorrow’s French toast.

Happy birthday to your wonderful mommy!!! You’re a pretty great daughter too by the sounds of your pressies :)

As usual I want to crawl into my computer screen and try everything you posted. I’m going to try my hand at baking bread this weekend! Do you think I can use a flax egg instead of egg replacer? If I’m successful, I’m most definitely going to try out your sandwich too!

I never use egg replacer, always flax egg! 1 tbsp + 3 tbsp water is one egg!

How funny I just bought parsnips and short-grain brown rice! Means I’ll totally have to try your dinner recipe, right? When are you going to post it (guessing Friday)?

I cannot wait to see the post for the sandwich, and I am hoping you will also be posting a recipe for dinner? Or, did you simply use bottled BBQ sauce? Either way, I am really wanting to try it!
