Stress head

It’s that time of the week again…a time to share eats and occasionally let it all out!

I’ve been a bit of a stress head the past few days as I have someone working on getting my site moved to a new server (a new company entirely) and trying to sort out domain issues. I’ve learnt to take a step back from most situations and put them in to perspective but when it comes to the site I’ve just put so much in it to if anything should happen I’d be heart broken!

Hopefully it will all be sorted soon enough; we’re almost there! In the meantime it’s time for What I Ate Wednesday! Thanks as always to Jenn for hosting!

I’ve managed to make some amazing eats amid the stress; when I’m stressed I cook, nothing else helps to keep my mind of whatever is giving it a hard time Smile

Yesterday started with French Toast! The quick and easy breakfast that never fails to satisfy! I made use of a few slices of the raisin cinnamon and walnut spelt bread I recently whipped up.

Crunchy sweet wholesome bread…the ideal French toast base!

Topped with apple pie components and coated in a protein “sauce”…recipe will be up tomorrow for both!

For lunch I had the simple comforting barbecue tofu with kale chips and cauliflower cheese – which I posted yesterday! I’m getting better at it folks!

A really simple hella tasty meal that satisfied on all counts and kept me going almost up until dinner time…

I had myself a whopper of a conference pear in the afternoon to tide the gap.

Dinner was an amazing experimental success…remember the basil silken tofu sunflower seed pesto?

Meet it’s sundried tomato almond cousin! It was AMAZING. The almond flavour really held it’s own against the sundried tomatoes! I was mightily surprised and delighted with the result.

An giant oaty almond tahini cookie baked full of yummy goodness?

Topped with a smidgen of cashew butter with Alpro Plain Soy yoghurt and a whole fresh juicy mango on on the side.  The best cookies I’ve ever made…it’s official! Smile

Delicious! Recipe will be up on Friday! Off to bed early I went on a full tummy (I find I sleep better having had a night time snack…I’m not saying it works for everyone but it works for me!)

I even managed to get the hand shot…no wobble! They’re not quite the size of my face but a good double palm size!

Sorry to hear you’ve been a little stressed this week! I hope it all gets figured out with no issues. I know how stressful blog/computer stuff can be!

All of your eats look amazing, per usual! As for cookies, I prefer one larger one to a couple smaller ones. The larger ones leave more room for more chewy goodness in the center – my favorite part!

Well it’s back up now on over on my new Dreamhoster server…just trying to get the domain issues sorted … have someone trying to work through it for me…!

Yay for larger cookies….all the more room for spreading nut butters on top and the chewy goodness of course!

one big cookie, definitely! hehe. i went to google your raspberry scones this morning and your site was down, i thought “oh no, shel must be stressin out!” hope everything else goes smoothly for ya. hoping to try my hand at those scones tomorrow, made sure to buy the whole grain spelt flour at work today…

All your meals look wonderful as usual! I am constantly jealous of your cooking, baking, and photography skills. :-) I just know that cookie recipe is going to be a must-make for me, I mean almond tahini? Yum!

I’m sorry to hear about you having been stressed. It’s clearly understandable you’re worried about leaving this blog you’ve put such a lot of work into to somebody else. Hope they’ll work things out for you soon!

Cooking and baking (!) is a great stress reliever for me, too. Still, I’ve refrained from too elaborate kitchen fun lately because I’d easily use it to procrastinate from the class work I actually need to do :D .

Mmmh, the sundried tomato pasta looks ridiculously delish.
