
Baked Banana and Mango oats! You can beat a good individual portion of baked oats. Time and time again I forget how much I love them. It’s probably a good thing otherwise I’d only over do it and end up not liking them as much!

There are countless baked oat recipes around the blog world and people have different preferences when it comes to texture and of course flavour…

For me…
- You have to use jumbo oats
- Half a mashed ripe banana is a must
- I like them crisp on top, squidgy in the middle and firm around the edge…not much to ask

- They should be served with a dollop of nut butter on top
- Equally as desirable chilled or served warm; ideally whip up in advance and chilled to allow them to firm up a little more
- There must be at least one other fruit in the mix..my favourites being berries and ripe juicy mango…truly melt in the mouth and the flavour infuses the oats surround the ripple of fruity goodness
Mango and banana is one of my favourite combinations. What makes it even more heavenly is a sprinkling of cacao nibs and coconut and a dollop of white cashew butter will take them to a whole new world of wonderful.

Tuesday morning’s are always a bit of a rush. Super spin followed by a quick shower and then out to meet my mum to do the weekly grocery shopping before heading down to Greystones to pick up my bits to cook up a storm of a Wednesday for The Happy Pear Happy Heart Course- recipe testing and photographing! Having breakfast sitting and waiting for me is a massive plus…

Of course I always take the time to take a few snaps! Having something delicious and not having the recipe and photos to share it later in the week would just be frustrating…though a good excuse to make another batch ![]()

I feel like I’ve been posting a hell of a lot of breakfast and sweet recipes of late so it’s time to play savoury catch up! Not to distract from the oats! Whip yourself up a batch for tomorrow morning I promise you won’t be disappointed!
What’s your preference when it comes to baked oats…soft and squidgy, crisp or do prefer them a little bit more on the loose side? I like mine semi solid like a soft cake….all the better for transporting if needs be!
Banana Mango Baked Oats
Servings – 1
Preparation Time – 5 minutes
Cooking Time – 25 minutes
Ingredients
Oats
- 1/2 cup (50g) jumbo oats
- 1/2 tsp baking powder
- 1/2 tsp desiccated coconut
- 1/2 tsp cinnamon
- 1/2 small ripe banana mashed
- 80ml (1/3 cup) almond milk
- 1/3 cup diced mango
Toppings
- 1/2 tsp raw cacao nibs
- 1/2 tsp desiccated coconut
- 1/3 cup diced mango
- 1 heaped tbsp white cashew butter
- Other half of banana slice
- Fresh mint to garnish
Directions
- Preheat oven to 180C (350F).
- Mix together mashed banana and milk.
- Mix together oats, cinnamon and baking powder.
- Add wet to dry, stir to combine and stir in mango. Place mixture in to a medium ramekin or individual le creuset dish!
- Bake in the preheated oven for 30 minutes. Allow to cool if you wish to chill and remove from the dish. Alternatively serve with toppings straight from the oven. Just be careful not to burn your tongue!

i wish i could find jumbo oats! i like baked oatmeal a little more on the firm side. like you said, crisp around the edges
