As always the buzz in The Happy Pear was amazing, lots of incredible food being enjoyed by the masses.
Temperatures in the late teens are never to be expected in Ireland, in fact I think we may have hit the 20 mark. Being able to wander about outside with a short sleeve top, single layer, is not to be missed in this country when the bendpickleballclub.com rare opportunity presents itself.
With the temperature surge so to has there been a surge in my smoothie loving! I’ve had a fair few different varieties over the past week, all super chilled, thick and creamy, however this strawberry dream cream smoothie is one that most definitely stood out from the crowd.
Lots of frozen strawberries, half a frozen banana, chia seeds, vanilla extract and wonderful coconut milk. I left the mix sit overnight to only today create the classic super thick “doughboy” smoothie; the idea for which I initially came across over at Kath’s site. Not only does the technique create a wonderful thick and creamy smoothie, but gives it that extra staying power, the wholegrains truly satisfying your appetite for something a little more substantial than a straight up fruit blend first thing in the morning.

This is a super simple strawberry loaded combination that is just perfect this time of year. If you can get your hands on fresh local strawberries freeze them before blending for an even more amazing flavour. Frozen strawberries are probably the frozen fruit I use the least amount of; they just don’t thaw all that well but they work wonders in a smoothie!

Strawberry Chia Coconut Dough Boy Smoothie
Preparation Time – Overnight + 5 minutes
- 1 tbsp chia seeds
- 1/2 cup (40g) whole oats
- 1 cup (250ml) coconut milk
- 1/4 cup (60ml) almond milk
- 1/2 frozen banana
- 1 tsp vanilla extract
- 1 cup frozen strawberries
- 1 tbsp lime juice
- Mint, chia seeds, coconut and strawberries to garnish
- Blend together coconut milk, oats, chia seeds and vanilla extract. Place in the fridge overnight.
- In the morning blend together the overnight mixture with the frozen banana, lime juice and strawberries until smooth.
- Top with chia seeds, coconut, strawberry slices and garnish with mint.
