Neapolitan Dream!

Is anyone else completely flummoxed by the fact that it’s now June? Where on earth did the first half of my year go?!

May is usually one of the hottest best weather months in Ireland and although we’ve had a few nice days it hasn’t quite lived up to my early summer expectations. Here’s to an amazing June; I’m determined to get some more outside runs in! The strawberry man from Wexford was officially parked up on the main road on June first…a true sign that summer has officially arrived!

I made myself one mighty smoothie yesterday which involved a couple of jugs and the base of my handblender being rinsed mind smoothie making to avoid cross contamination of the layers.

So worth it! Recipe will be up tomorrow!Smile A trio of my favourite flavours all in one super duper smoothie!

Ultra thick! The straw just wasn’t going to cut it!

Next up was brunch in pancake form..some of the best pancakes EVER! They were truly “cake” like and incredibly flavourful.

Quite the mix of flours! After a couple of not to successful pancake experiments last week I was delighted when I sat down to this plateful.

For lunch it was cauliflower pizza time…if you could call it a pizza as it’s as far from a traditional pizza as you could get! I’ll have the recipe up Friday morning!

Cauliflower crust, basil cashew cream and roasted tomatoes. The only time I’ll eat tomatoes is come summer when they taste like sweets! Given a little roast the flavour just pops. A really simple midday meal, served up chilled…any excuse to enjoy some more cashew cream! Recipe will be up tomorrow.

I finally got around to make another burger (it was quite the alternative “fast food” day!). A barbecue chickpea and brown rice burger with heaps of texture and a bountiful amount of flavour.

Served between a light and bouncy homemade spelt bun….perfect for barbecue season! Recipe will be up Friday evening.

My bed time snack was quite the indulgence. Chocolate orange ginger bundt cake with a chocolate glaze…truly heavenly! You’ll be delighted to know I actually posted this one yesterday having made it at the weekend! One of my friends from the gym has actually me to bake him a cake and this was the experimental one I made to give me the confidence to sell a creation! Smile

So fantastic that it deserves more than the usual two preview photos!

By the way if anyone has some nifty quick way of placing a watermark on photos using Photoshop Elements under than “placing” it on individually….please let me know! Smile

What was the best thing you ate yesterday? Clearly I can’t answer that question! WAY too hard!

  1. A dream is right! That looks so pretty. You got the colors perfectly. Can’t wait to see the recipe and what you used for each layer. I bet that would be awesome frozen just a little more– like fro yo neopolitan style!

  2. Congrats on being asked to bake a cake for one of your gym buddies! That just goes to show you should open up a restaurant or start a delivery service – to Germany, please :).
    Aren’t roasted tomatoes amazing? I can pop them like candy and it’s a good thing they’re getting cheaper again.
    I’m not a smoothie person but super impressed by your pretty creation and the effort you put into it – and all of your other meals.

  3. I’m completely flummoxed by the fact that you used the phrase “completely flummoxed”! haha! Love you, and DEAR LORD I need that pizza and that burger in my belly now! Both look delish! I’m with you–tomatoes are only delicious when they taste like candy.
