No bread or similar alternative was used in the making of these sandwiches!
Last week I got an usual longing for something chilled and creamy. We have these ice creams in Ireland/Europe called Icebergers…I’m not sure if you have something similar or not in the US?
A soft brownie like cookie sandwich filled with creamy vanilla ice cream. I like ice cream, I’ve never loved it (call me strange) but every so often I get a craving. When I feel like splashing out it’s Booja Booja all the way, banana softserve when I’m short on pennies.
The mint chocolate chip softserve I posted previously was just what I was looking for; though minus the chocolate chips seen as I was all out and milled in to the remainder of the bar of dark chocolate the night previous (I blame PMS…another random craving!)
The cookie sandwich would make up for the lack of chocolate chips…especially seen as I went with a raw brownie like cookie! Moulded in a silicon muffin tray and in to the freezer they went while I whipped up the softserve.

Sandwiched in with the remaining four brownie like soft cookies!!!
One got devoured immediately post photo shoot, the three others on a plate lined with baking parchment in the freezer. They were even better having had a little more freezer time.
Five minutes free of the frozen environment and the cookie and softserve both softened up perfectly. The cookie still sturdy and holding strong, the softserve just starting to melt, creamier then straight from the freezer and 100% lickable!
One remains and I have a second one variety is most definitely on the cards as soon as I free up enough space to house them in the freezer! Who would of thought I’d be still wearing sleeveless/short sleeve shirts and eating ice cream sandwiches without the heating on in the middle of October?!

Mint Brownie Ice Cream Sandwiches

Ingredients (4 cookie sandwiches)
- 90g (1/2 cup) Medjool dates pitted
- 50g (1/2 cup) Gluten Free Oats
- 60g (1/2 cup) whole raw almonds
- 1 heaped tbsp unsweetened cocoa powder (approx. 15g)
- 1/2 – 1 tbsp of water
- 1 tsp vanilla extract
- 2 medium super ripe bananas frozen
- 2-3 tbsp almond milk
- 1 tsp vanilla extract
- 2 large handfuls spinach
- 1 tbsp fresh mint leaves
Blitz oats, almonds and cocoa to a coarse crumb in your food processor and set to one side.
Blend dates to form a paste with vanilla; add back in dry ingredients and add a little water until you have a firm dough that sticks together when you press it between your finger tips.
Divide in to 8 balls and flatten to form thin rounds – approximately 10cm in diameter.
Place on a plate or tray with a layer of baking parchment underneath and set aside in the freezer.
Blend together all softserve ingredients until smooth and creamy. Place in a bowl in the freezer until ready to assemble.
Place a generous dollop on top of four of the cookies; remaining four cookies sandwiched on top.
Eat straight away or return to the freezer until ready to enjoy!
