Coconut & Pumpkin!

Coconut and Pumpkin…I’ve been a kick of both lately in no particular order. From macaroons, to pumpkin pie to squash EVERYTHING,, I just can’t get enough of either one of them.

I whipped up a few treats and delved in to them in the usual Tuesday fashion…just in time for What I Ate Wednesday! Thanks as always to Jenn for hosting. If you’re a food blogger who’s yet to join the party be sure to check it out!

 

I FINALLY got my bowl of pumpkin oats! Steel cut oats to be precise complete with a full on scoop of coconut and cashew butter mixed.

Officially my first ever bowl of steel cut oats (I used Bob’s Red Mill Gluten Free Steel Cut Oats) and I fell head over heels in love at first spoonful. Such an amazing texture!

I’ll have my recipe/method up tomorrow morning! Such a comforting warming bowl of seasonal goodness!

I’ve made four batches of macaroons in a week…#newobsession ! I’m seriously in love with them!

Crumbly, ever so slightly chewy and incredibly coconutty! They’re the coconut treat for the coconut lover in your life. Super easy to make, one bowl, no blitzing just mixing and a little moulding and you’re good to bake! Recipe will be up this evening!

I snack on one mid morning…obligatory batch taste testing of course!

For lunch I had a delicious plateful of roasted veggies…

Carrot, turnip (swede), butternut, shallots, beets on a bed of creamy hummus with a “cheesy twist”…toasted hazelnuts over the top. So simple, so satisfying! I’ll have the recipe if you can call it that up for this plateful of deliciousness over the next few days!

And yet more squash for dinner! This time in the “meatball form”…

I’ve been making a conscious effort to come up with some seasonal alternative recipes for Thanksgiving…these are loaded with wonderful flavours and textures (including roasted pecans!), vegan friendly but of course and gluten free!

I finished the day the same way I started it…with a pumpkin loaded treat! Almost raw chocolate pumpkin pie! No baking but there is a teeny tiny bit of cooking involved.

Smooth, creamy, luscious and rich with a pecan, coconut and cacao nib topping. It was actually my last slice, a slice, one which I’d been saving since last week and boy was I glad I did. It was just what I needed after a jam packed bustling day.

I love ending the day on a sweet note! I’ll have the recipe up for this one on Friday morning!

  1. Are you sure you don’t need any more recipe testers or taste testers ;)? Coconut and pumpkin are daily staples for me and I’d eat everything you prepared here. Wow! Can’t wait for the recipes but especially the one for lunch intrigues me.
    With a huge sweet tooth I usually end my days on chocolate and apples. Every now and then a savoury craving hits and then it’s kabocha with a sprinkle of sea salt for me.
