Just like it says in the title…coconut, pecans, dates…no baking with optional chocolate drizzle!
These no cease to exist. I pretty much ate them singlehandedly apart from a couple which my dad partook in. I’m still making up for my lack of coconut loving as a child, sprinkling it on everything that comes my way be it savoury or sweet, I just can’t get enough!
FYI – coconut strawberry pancakes are even more incredible when you can get your hands on some seasonal local strawberries!
It’s funny how things cross between generations. My little niece, quite the foodie, is not at all partial to coconut. She can detect it in pretty much everything. I guess it’s one of the lovable tastes that changes with age. I hate to think of her missing out entirely!
Coconut and pecans is one incredible combination (and we all know how well pecans, chocolate and good sticky soft Medjool dates go together!)
If you don’t have time to bake cookies these quick blitz in the processor, no fuss, coconut bliss balls are a must! Loaded with coconut, sweet dates, crunchy little bites of pecans and drizzled with dark chocolate just to set them apart from your standard energy ball.
The only must is liking coconut…there’s no getting away from it! If you can’t find anyone else who shares your love single handedly devour them over a couple of weeks..the perfect snack any time of the day, satisfying my sweet tooth in one fell swoop…or maybe two bites later!

Coconut Dough Bliss Bites
Prep Time: 5 minutes

Ingredients (22 – 24)
- 1 cup (120g) raw pecans
- 2 cups (360g) pitted Medjool dates (approx. 18 – 20)
- 2 cups (160g) unsweetened desiccated/shredded coconut
- 1 tsp vanilla extract
- Pinch of sea salt
- Melted dark chocolate for drizzling!
Blend dates to a paste in our food processor.
Remove and blitz nuts to a fine though slightly coarse in parts, crumb.
Add all ingredients to your food processor and pulse until combine. The mixture should hold together when pressed between your fingertips.
Roll mixture in to just smaller than golf balls sized rounds.
Drizzle or dip in melted dark chocolate if desired.
Place in the fridge where they’ll keep in a seal tight container for up to 2 weeks.
