A grain free take on tabbouleh with a summer twist…fresh sweet strawberries mixed with lots of herbs, almonds, ground raw cauliflower, a squeeze of lime…truly refreshing and satisfying to the last bite.
It’s about time I posted a salad!!! One for everyone regardless of dietary preferences. Vegan, paleo…it’s got nuts in but you could easily sub them out for ground seeds if needs be.
An incredible array of textures, fresh flavours, naturally sweet, truly wholesome…I dug my way through a mound of it one morning last week and had to refrain from eating the whole lot in one go.
I’m not usually a fan of raw vegetables per se but when they’re diced fine or shredded, mixed with a simple dressing and a delightful mix of other goodies…there really is nothing better.
Strawberries are just coming in to season, beautifully soft sweet and bursting with flavour…FINALLY! It’s been a long winter! Is anyone else super excited for summer produce? Peaches, nectarines, CHERRIES!!! Summer fruit season appeals to me more than Christmas!
It’s the season for salads, smoothies…and this year grilling. This salad would make for an incredible addition to any barbecue, garden party…a side, as it is with some chickpeas to round it out or some seared salmon…a dollop of coconut yoghurt or a poached egg for breakfast or brunch.
It’s likely to be my new go to!

Summer Strawberry Grain Free Tabbouleh
Prep Time: 10 minutes

Ingredients (Serves 2)
- 1/2 a medium head of cauliflower
- 1/2 cup (60g) almonds
- 1.5 cups (230g appox.) fresh strawberries diced
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh chives
- 2 spring onions finely chopped
- 1/2 a small yellow pepper finely diced
- 1/2 a small orange pepper finely diced
- Zest and juice of one lime
- 1 clove of garlic minced
- 1/4 tsp Himilayan rock salt
- 1/4 tsp black pepper
Roughly chop cauliflower and blitz in your food processor to a coarse rice/bulgar wheat type texture. It will take seconds!
Whisk together lime juice, zest, salt and pepper, and garlic.
Mix together all other salad ingredients. Pour over dressing and stir well to combine. Ideally dress and let sit in the fridge or at room temperature a couple of hours before serving.
