Thin buttery omelet loaded with spicy biltong (dried cured meat!), roasted peppers, spinach, smoky salsa, topped off with dairy free queso! Breakfast heaven!
My go to protein of choice when I have no leftover meat at hand is more often than not canned salmon…(as I mentioned earlier in the week!). When it comes to protein snacks I tend to sway towards those of the sweeter variety..though devilled eggs are always amazing and much appreciated when I have the foresight to make them and restraint not to devour them as soon as I do!
Homemade beef jerky free of preservatives, sugar and any other unnecessaries was on my never ending to do list. I did consider buying some from the US and then quite randomnly discovered there was an Irish company making just what I was after! Nial, one of the men behind the company asked could I possibly create a recipe using the steak strips and of course I leaped at the chance…as if I needed any encouragement! I have a rake of ideas, some of which I blame for my not having had much sleep the other night. Sometimes I just can’t switch off from recipe creation mode and my creative mind just wouldn’t switch off. Although he only asked for one I will most definitely be posting a few more recipe ideas over the next few weeks.
So where was I going with the canned salmon reference…?! Well this beef jerky is now up there with an alternative hassle free straight from the pack protein to boost simple throw together meals.
Of course steak and eggs was my first port of call. It’s been AGES since I had an omelet. But not just any omelette. Rather than the thick and fluffy kind I went with one of my thin and buttery crepe style omelettes. Perfect for loading with fillings and finishing off with a couple of saucy toppings. Think of it more as a replacement tortilla!
Homemade dairy free queso…butternut squash, coconut yogurt, nutritional yeast and raw cashew butter…creamy dreamy loveliness! Mingled with a little of my quick thick smoky salsa. I’ve been on a bit of a “Tex Mex” kick this week…think fajita chicken, mounds of guacamole. I think it’s all the super bowl recipes that have been posted across the web, more often than not loaded with Mexican flavours.
It came together in minutes (thanks to having my toppings and fillings sitting and waiting in the fridge)…incredibly satisfying, packed with goodness and incredibly moreish. This one will most definitely be on repeat!

Tex Mex Steak Jerky Omelet
Prep Time: 5 minutes
Cook Time: 5 minutes

Ingredients (Serves 1)
- 2 large organic eggs
- 1 tbsp water
- 1/2 tbsp ghee
- Pinch of salt and black pepper
- 1 – 2 packs of chili beef jerky
- Handful of chopped baby spinach
- Handful sliced roasted or sauteed mixed bell pepper
- 1 spring onion finely chopped
- Smoky Salsa
- Guacamole (smashed avocado, lime juice, salt and pepper)
- Lime Wedges
Whisk together eggs, seasoning and water.
Melt ghee in a 10 inch skillet over a medium to low heat. Add eggs, ensure evenly distributed and cook for 3-4 minutes until just set. Slide on to a plate and load with layers of spinach, peppers, spring onion and beef jerky.
Drown with salsa and queso, fold and top with more of the same.
Garnish with coriander and serve with a side of guacamole!
