Paleo Protein Coconut N’Oatmeal

Creamy, sweet, with just enough of a texture to satisfy, the protein loaded grain free alternative to your standard bowl of morning oatmeal.

With my new tub of paleo protein in hand, Exotic flavour this time, (this is not an affiliate link) , I felt the need to try and find another alternative use for it. So far I’ve successfully made protein bars, pancakes and a mug cake that’s been on repeat quite a number of evenings this week.

Oatmeal? Without the oats? I have made a grain free oatmeal which totally hit the mark in terms of texture but the whole process was a little time consuming, perfect for a weekend morning but when I have 5 minutes to throw something together it’s not ideal. I’m usually much more of a savoury breakfast kind of person, give me smoked salmon, scrambled eggs and avocado every day of the week and I’ll keep smiling.

Then occasionally  I get a longing for something a little sweeter, something creamy and warming. Granted it is summer but you have to remember I live in Ireland; as I sit here typing I’m looking out and listening to the rain pelting down outside; we have windows in the roof of the kitchen extensive so it’s hella noisy! Not exactly cold but a tad chilly, especially having spent a good half an hour of this evenings training session outside in it!

So “porridge” or “n’oatmeal” is totally appropriate and longed for! I actually made the first batch this morning and then decided to go in for seconds this evening. It was a “brinner” kind of day; the last of the quiche filled the gap in between the two comforting bowls of deliciousness.

This bowl of awesomeness totally blew me away. I hadn’t even intended on sharing it with the world but immediately had to Instagram it, I was so darn excited! The texture is light and creamy, smooth with just a hint of “chew” if you could even call it that. Naturally sweetened with ripe banana, its the perfect post workout mix of glycogen replenishing carbohydrates and protein. Along with the protein powder there’s a little added extra from the egg which trust me you wouldn’t even know was in there!

Not at all savoury, the coconut flour works a treat, thickening up the mix and leaving you with a truly satisfying on all levels breakfast bowl to top how you please. Just a little fruit, bee pollen, hemp seeds, pistachios and a dollop of Coyo were my toppers of choice. Truly incredible!

What’s your favourite grain free alternative to oatmeal?

Paleo Protein “N’Oatmeal”

Prep Time: 5 minutes

Cook Time: 6 -8 minutes

Ingredients (Serves 1)

  • 1 scoop paleo protein; all flavours work well!
  • 1 medium sized ripe banana (approx. 100g)
  • 1 large organic egg
  • 3 tbsp (21g) coconut flour
  • 1/2 cup (125ml) coconut milk
  • 1/4 cup (60ml) water or more coconut milk if you like!
  • 1 tbsp hulled hemp seeds
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract (not essence)
  • 1 tsp melted coconut oil

Toppings

  • Berries, Bee Pollen, Coyo, Pistachios, Coconut Flakes…whatever you please!

Instructions

Blend together all ingredients with the exception of the hemp seeds using a hand blender; I do this in a jug.

Heat coconut oil in a pot over a medium heat. Once melted add the “oatmeal” mix, bring to the boil, give it a whisk and leave it to bubble for a 2-3 minutes. Whisk again, reduce to simmer, cook for 3- 5 minutes more; whisk again, stir through hemp seeds and serve with toppings of your choice!!!
