Jumbo thick fluffy lightly fudgy chocolate protein pancake…the perfect way to start your pancake day!
Pancake Tuesday is almost upon us!!! I have alternative pancake recipes to share with you…it was a tough decision deciding which one to share first. The jumbo chocolate pancake one out over the triple coconut stack on this occasion merely for varieties sake!
I make something similar to this most mornings before going to the gym. If you don’t want a jumbo pancake you can make 4-5 smaller pancakes and stack em high! The thing I love about the bumper version is the sheer handiness of it. All the batter in at once, no flipping, straight under the grill and just one not at all messy flip at the end for a final teeny weeny bit of cooking on the top side.
It’s incredibly satisfying…super filling and looks mightily impressive too! Light fluffy and just a little bit fudgy in consistency, I like to spread my toppings over the top, mashing up those berries as the heat of the pancake gives them some warmth, making them ooze; once mashed and mingled they’re like fresh jam.
The hazelnut butter I would nearly say is a must have topping as is the Coyo or you own favourite dairy free yogurt alternative. Coyo is amazing…I am obsessed and it has me broke! I have a tub of it EVERY day without fail. Made from coconut milk, no sugar or sweetener, just probiotic cultures for twang and tapioca starch to thicken, it’s my favourite night time snack.
It of course is extremely versatile, making a mighty pancake, “oatmeal” and even salad topping! Cool and creamy deliciousness that of course works magically with fresh berries, hazelnut butter on bumper pancake base.
I infused this big badass pancake with my staple Pulsin Whey Protein Isolate. Again for me it’s a daily ingredient, if not in pancakes, blended in to my all star green fruitless smoothie, banana protein mousse, or moulded into one of my awesome chewy fudgy single serve protein bars.

Giant Chocolate Protein Pancake
Prep Time: 5 minutes
Cook Time: 8 – 10 minutes

Ingredients (Serves 1 -2)
- 1 tsp (5g) melted coconut oil for cooking
- 1 tbsp (10g) whey protein isolate
- 2 tbsp (15g) coconut flour
- 1 tbsp (7g) raw cacao powder
- 1/2 tsp baking powder
- 3 tsp (approx. 6g) psyllium husk flakes
- 3 large organic eggs (approx. 3/4 cup)
- 2 tbsp (30ml) full fat coconut milk
- 1/2 – 1 tbsp stevia erylite
- 1/4 tsp cinnamon
- 1/4 tsp fresh vanilla or 1/2 tsp vanilla extract
- Cacao nibs
- Hazelnut Butter
Blend together all batter ingredients in a jug using a hand blender.
Melt coconut oil in a pan over a low to medium heat.
Once the pan is hot add the pancake batter, once slightly set lower the heat, leave to cook for a couple of minutes.
Place under a preheated grill for 1-2 minutes to speed up the cooking process!!! Flip and cook for 1 minute more.
Serve pancake with toppings of choice! Slice it up to serve as pancake wedges if you prefer!
