Mighty Thick Luscious Paleo Shamrock Shake

Thick luscious whopper paleo take on the shamrock shake…quite a treat for Patrick’s Day!

I love a green smoothie…it’s my go to post workout shake, usually with banana if it’s the first thing I devour after the gym…though equally as delicious sans fruit any time of the day!

This on the other hand could be by no means described as a smoothie, it’s most definitely a shake! Super thick creamy, 100% dreamy…and also made for sharing! The coconut milk makes it incredibly rich so devouring this one on your own would be no mean feat! I didn’t even attempt it, at least not in one sitting. I held on to the second half for a little experiment…

I froze it in an ice cube tray and blitz it back up in my high speed blender with a little unsweetened almond milk to get things moving…instant ice cream!

I did prefer it as a shake but had I allowed it to simply chill in the fridge I’m not sure if the coconut milk would have tried to do it’s usual separating jazz!  I took the safe option so as to make sure it didn’t go to waste.

I haven’t whipped up a whole lot else with Patrick’s Day in mind but I’ve a fair few recipes that fit the bill already on the site!!!

Super Think Minty Green Shamrock Shake

Prep Time: 5 minutes

Cook Time: None..but a whole lot of drink

Ingredients (Serves 2)

  • 1 can of full fat coconut milk refrigerated overnight (reserve 2 tbsp of cream from the top for topping the final shake!)
  • 3-4 coconut milk ice cubes (frozen full fat coconut milk)
  • 2 handfuls of spinach
  • 2 tbsp roast cashew butter
  • 1 handful of fresh mint leaves
  • 1/2 tsp vanilla extract
  • 2 tbsp (40g) raw honey or 50g Medjool dates (pitted weight) or 30-40g stevia
  • 1 scoop (30g) whey protein isolate (optional)

To Serve

  • Cacao Nibs
  • Fresh Mint
  • 1-2 tbsp coconut cream that you have reserved!

Instructions

Place all ingredients in a high speed blender; use the full can of coconut milk, refrigerating it overnight just ensures the shake is cold, thick and creamy!

Blend for a couple of minutes until completely smooth; it will take a little longer if using Medjool dates!

Serve topped with coconut cream (reserve 1-2 tbsp from the can or use from the top of another can!) and cacao nibs! Long spoon a total necessity!

  1. Im all about thick and delightful milkshakes, and shamrock shakes have always had a special place in my heart! Im totally wowed that there are no bananas in here or any type of fruit! The coconut milk lends to all the creaminess!

    1. Yep refrigerating it overnight makes all the difference. Once blended it back together it’s super thick and of course the frozen coconut milk lends a hand too!
