Single Serve Three Ingredient Protein Macaroons

Crispy on the outside, fluffy in the middle, naturally sweet with a surprising protein hit. A delicious satisfying bite…or make that two!

Made in less than ten minutes, these single serve macaroons are quite the healthy treat! You make them as sweet as your heart desires by using stevia (I usually use Dr Coys Stevia Erylite or Stevia drops, both work in this recipe!)… I actually find these almost sweet enough just as they are. If you’re using a sweetened whey protein then you most likely won’t need to sweeten them any more. Of course I used my favourite Pulsin Whey Protein; both the concentrate and isolate work, opt for the later if you want slightly more a protein hit.

I make one of my single serve protein bars EVERYDAY. Pair with a tub of Coyo or a bowl of oats depending on whether or not I’m doing high carb or high fat on any given day, it’s my go to snack before bed. These will definitely be filtering into the rotation. I’m thinking they would be even more awesome “Bounty” style aka dunked in a couple of layers of 90% dark chocolate. I wasn’t sure if they would even work to be honest. I saw @healthylittlelifter post a single serve macaroon recipe and just had give it ago with my own spin on it

My recipes are getting more and more simplistic these days. I spend so much far less time at home; I do take some time out to concoct something a little more extravagant dessert wise for two of my friends who have a weekly standing order! When it comes to my own meals and snacks the more quickly I can throw them together the better to be honest! Now that the darker nights are upon us and the cooler temperatures I may have to whip back out the slow cooker; though it’s likely I’ll be just making a super duper mighty batch of my most recent chili.

There is a few variations for these protein macaroons…add in 1 tbsp of nut butter of choice (I recommend cashew butter!) Add some vanilla extract (or whatever natural flavour extracts you have at hand, lemon or almond would be nice!), cinnamon, some toasted chopped nuts, or mould them into thumbprint cookies before baking and then fill the dent with melted chocolate or some all natural fruit jam/jelly.

These are definitely for the coconut lover, there is no avoiding it. Pure unadulterated coconut bliss.

Single Serve Protein Macaroons

Prep Time: 2 minutes

Cook Time: 5 – 7 minutes

Ingredients (Serves 1)

  • 30g (1/3 cup) unsweetened desiccated coconut
  • 1/4 tsp vanilla extract or powder
  • 1 tbsp (10g) whey protein concentrate
  • 5 drops liquid stevia or 1 tsp powdered Stevia Erylite ; you will not need to sweeten these if your protein is already sweetened or find coconut sweet enough like my good self!
  • 2 tbsp (30ml) egg white
  • 1 tbsp (15ml) almond milk
  • Optional extra – 1 heaped tsp nut butter of choice!

Instructions

Preheat oven to 160C (325F).

Mix together ingredients in a bowl. Wet your hands a little and mold the mixture into two mounds or shape of choice.

Place on a non-stick baking tray and bake for 5-7 minutes. Until crisp on the outside and golden!

Serve as is or dunk in some melted dark chocolate or nut butter of choice!
