Double the peanut butter, protein loaded bars, low carb and relatively low fat.
Picking up a protein bar without additives, sugar alcohols or artificial flavours and sweeteners is virtually impossible. Making your own can be so darn simple, especially with single serve recipes.
I probably shouldn’t even call this a recipe as really you’re simply mixing the ingredients in a bowl and you’re good to go! If it’s two hefty on the protein for you, simply swap out the peanut flour in the icing or the bar or both for cacao or cocoa powder depending on your preference. The cacao powder will offer more nutritional goodness, the cocoa a slightly more intense chocolate flavour! I personally am a peanut butter addict so the double duty peanut butter is right up my street! If you don’t want to use stevia and don’t mind the extra carbs you could use maple syrup or honey to sweeten these. I’d start with a tsp in the bars and maybe half a tsp in the icing…because icing is meant to be super sweet and it’s what makes the bars pop!
I love the combination of the dark chocolate and flaked sea salt on top. I think you’re either a salt and sweet together kind of person or not so it’s totally optional. You could of course make a a bigger batch of these so you’ve protein bars on hand for the week ahead. Just store them in the fridge! They’ll keep pretty well out of the fridge if you grab one in the morning to take out with you for later in the day. My trick is to actually freeze them if you plan on doing this and then it will give them a bit more staying powder in warmer climates.
I used Pulsin Whey Isolate in the bars and the Concentrate for the icing just because it creates a smoother icing consistency! If you do want to get 15% off Pulsin products online you can use PPAL15. I don’t make anything from the code. I haven’t tried any of the other protein powders for icing but you could use the Rice or Pea protein for the bar base. You made just a teeny touch more water to bring it together and of course the taste and macros will vary a bit.

Single Serve Double Peanut Butter Protein Bar

Ingredients (Serve 1)
For the Bar
- 30g Pulsin Whey Protein Isolate
- 10g Peanut Flour
- 15g (1 tbsp) Smooth Meridian Foods Peanut Butter
- 1.5 tbsp water
- 5 drops stevia
For the Icing
Mix together all bar ingredients in a bowl. Don’t be tempted to add more water. Bring it together to form a smooth firm dough. Mold into a bar shape.
Mix together icing ingredients. Spread over the top.
Drizzle with melted chocolate and top with sea salt if desired. Serve straight away or store in the fridge until ready to serve.
