An easy weeknight meal… this is one which I created for Gahan Meats. Once a week at the very least you will now find a savoury recipe over on my Instagram account. I had a few requests to have this one available on the site so that people could pin or easily print it out. I’m a woman of my word so here goes…
This is such a simple evening meal packed with flavour. If you prefer you can of course use ground chicken or turkey mince instead, both will work well. If you’re not a peanut butter fan, almond or cashew work well too. So basically, I’m here to inspire your meals and sweet treat creations. I myself never follow a recipe exactly, even my own; unless of course it’s banana bread or a baked good because I’ve had my fair share of disasters over the years and I’d rather not waste ingredients if at all possible!
This comes together even more quickly if you have your meat and veg prepped in advance. I tend to bulk prep veg like peppers and courgette by simply roasting a big tray a couple of times a week. I also cook up a couple of meats be it a lb of ground beef or turkey and at least four chicken breasts at a time because when you’re cooking for one you don’t want that reminder every single night 🙂
Hoisin Beef Udon Noodles

- For the Sauce
- 4 tbsp (60ml) reduced sodium soy sauce or tamari for gluten free
- 30g smooth peanut butter
- 1 tbsp (10g) coconut sugar
- 1 tbsp (15ml) rice wine vinegar
- 1 tsp garlic powder
- 1 tsp sriracha / hot sauce
- For the Rest
- 500g 95% lean minced beef or minced meat of choice
- 1 tbsp (15ml) sesame oil
- ½ large red, yellow and orange pepper finely sliced
- Udon noodles (approx. 60g - 70g uncooked per person)
- Sesame seeds
- Spring onion finely chopped
Instructions
Blend together all sauce ingredients in a mini blender, using a hand blender or in a Nutribullet. Set to one side.
Put noodles on to cook according to packet instructions.
Add beef and sesame oil to a hot non stick pan. Saute beef for 5- 6 minutes, until nicely browned. Add in peppers and cook for 5 minutes more.
Add in sauce, bring to the boil and simmer for about 3 minutes.
Drain noodles and add to the pan. Toss well to mix everything together.
Serve noodles in bowls topped with pan juices, spring onion and sesame seeds.
