A brief interruption to the usual chocolate posts…, clearly all things chocolate is where my creativity flourishes, but in all seriousness, I need to get outside my comfort zone a little!
This summer berry smoothie bowl is packed full of goodness. Carbs, protein, a little fat. I actually made it with the Pulsin Vanilla Whey Protein but you could also use the exact same amount of their plain pea protein which works a treat. If anything you may need to add about another 60 ml of liquid as the pea protein does thicken things up even more!
I also made use of the new Meridian Foods Peanut Butter with Baobab which gives it a nice little twist! Baobab powder comes from the fruit of the Baobab tree and is a rich source of antioxidants, Vitamin C, calcium and potassium.
I went all out on the superfood front and added in a tbsp of lucuma powder. I have so many ingredients at hand that I don’t make enough use of all of them. Lucuma has a light caramel like flavour and just cuts through the slightly tart frozen fruits a little more.
It’s rich in iron, beta carotene, the precursor to Vitamin A, zinc and it’s a nice low GI addition to the berry – full smoothie. I added just a little banana to them mix. Depending on the volume consumed, and obviously every individual is different, but of all the smoothies, I could have about half of this one and not have any IBS symptoms; it’s low FODMAP probably at 1/3 of a serving, but that is very much a guesstimate.
I saved my beautiful fresh Irish, melt in the mouth strawberries for on top before digging into this pink bowl of yumminess!
Summer Berry Bliss Protein Smoothie Bowl

- 100g frozen strawberries
- 100g frozen raspberries
- 60g frozen banana chunks
- 125ml + unsweetened almond milk or Dream Vanilla Rice Milk
- 15g oats
- 15g Meridian Foods Peanut Butter & Baobab
- 20g Pulsin Vanilla Whey Protein or plain pea protein
- 1 tbsp (7g) lucuma powder (optional)
Instructions
Place all ingredients in a high speed blender. Blend until completely smooth. Add a touch more milk, 1 tbsp at a time and use the tamper for your blender to push everything down!
The consistency is like that of a soft serve ice cream!
Notes
I topped mine with strawberries, raspberries, bee pollen and a drizzle of the Peanut Butter and Baobab. I mixed about 1/2 tbsp with 1.5 tbsp of water.
