These cookies are a non vegan version of her creation with a few other little tweaks but 100% based on her idea. I went with a peanut butter variation, double chocolate, birthday cake and chocolate chip. The double chocolate spread the most, was the most chewy and actually the most crisp followed by the birthday cake. A jumbo cookie for every occasion.. can you guess which was my favourite… or which would be yours?!
Is there anything better than a freshly baked cookie…yes, yes there is, it’s four freshly baked cookies that you can share with your friends and have a bit of each because variety is king!
Single Serve Jumbo Cookies Four Ways

- **Basic Chocolate Chip Cookie**
- 15g butter at room temperature
- 20g soft brown sugar
- 4 tsp whisked whole eggs (approx. 1/4 of a large egg)*
- 45g plain white spelt flour
- 1/4 tsp baking soda
- Pinch of salt
- 1 - 2 tbsp milk chocolate chips
- **Peanut Butter Cookie**
- 15g butter at room temperature
- 20g soft brown sugar
- 3 tsp whisked whole eggs
- 45g plain white spelt flour
- 1/4 tsp baking soda
- Pinch of salt
- **Birthday Cake Cookie**
- 10g butter at room temperature
- 15g soft brown sugar
- 10g white sugar
- 10g smooth all natural peanut butter
- 4 tsp whisked whole eggs
- 45g plain white spelt flour
- 1/4 tsp baking soda
- Pinch of salt
- 1/4 tsp vanilla extract
- 1 tbsp mixed sprinkles
- **Double Chocolate Chunk Cookie**
- 15g butter at room temperature
- 20g soft brown sugar
- 4 tsp whisked whole eggs
- 35g plain white spelt flour
- 1 level tbsp rich cocoa powder
- 1/4 tsp baking soda
- Pinch of salt
- 2 tbsp dark chocolate chunks
Instructions
Preheat your oven to 180C (350F).
Cream together butter and sugar(s) in a bowl. Add peanut butter at the same time if making the peanut butter version.
Then add the egg and mix well to form a thick cream. You can do this by hand in a small bowl, no need for an electric whisk when making one cookie!
Add the flour, baking soda and at this point add the cocoa powder if making the chocolate version. Mix to form a soft slightly sticky cookie dough. Add vanilla extract if making the birthday cake version!
Add in chocolate chips/chunks or sprinkles.
Dampen your hands slightly, roll dough into a ball, place onto a cookie sheet that has been lightly greased or lined with parchment paper. Flatten the cookie dough a little to a thick round approx. 2 inches in diameter.
Bake for 10 - 12 minutes; until lightly browned, spread and looks done to your own liking. Allow to cool for 10 minutes on the tray.
Will keep for a couple of days in a sealed container if you decide to bake more than one at a time!
Notes
If you make a batch of four you can used one whole whisked egg and just divided into four if you want to make four different types of cookie!
