I love making use of nut and seed butters for wholesome satisfying dressing and sauces and this is one of my current favourites. I’m actually just on an all round almond butter kick at the moment.
I created this one for Lifeforce; they truly have the best almond butter. The texture is thick, yet drippy, easy to spread and drizzle, equally ideal for spooning straight from the jar.
If you’re in need of an extra spritz of summer, or are just bored of your usual salad and want some delicious veggie goodness in your life, whip this one up. If the weather plays ball it’s the perfect addition to any barbecue spread.
Broccoli Almond Butter Salad

- **For the Salad**
- 1 large head of broccoli chopped into small florets
- 150g finely chopped red cabbage
- 4 tbsp golden raisins
- 4 tbsp chopped almonds; chopped, not flaked!
- 4 tbsp finely chopped spring onions
- **For the dressing**
- 100ml fresh orange juice
- 30 - 60ml boiling water
- 70g Lifeforce smooth almond butter
- 2 level tbsp miso paste of choice
- 2 tbsp sesame oil
Instructions
Place all salad ingredients in a large bowl.
Blend together dressing ingredients in a blender, mini chopper, or in a jug using a hand blender until smooth.
Pour most of the dressing over the salad and toss to coat.
Serve with the final drizzle of dressing over the top!
